<h2>Method</h2>
<ol>
<li><span data-contrast="auto"> Heat olive oil in a wok or deep pan over high heat. Stir-fry the onion and red pepper for about 4-5 minutes.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add garlic, ginger, chilli and sugar snaps. Sauté for another 5-8 minutes, tossing regularly.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add teriyaki-, hoisin-, and soy sauces. Turn off the heat.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Toss the cooked egg noodles through the sauce and top with sesame seeds, coriander and extra chilli if you dare.</span><span data-ccp-props="{}"> </span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Boil potatoes in salted water until tender. </span></li>
<li><span data-contrast="auto"> Drain and place in a warm oven for 5 minutes to dry out.</span></li>
<li><span data-contrast="auto"> Mash potatoes with milk, butter and 1 tsp (5ml) salt. </span></li>
<li><span data-contrast="auto"> Spoon into the bowl of a stand mixer fitted with a dough hook.</span></li>
<li><span data-contrast="auto"> Add cake flour, bread flour, eggs, yolk, sugar and yeast. </span></li>
<li><span data-contrast="auto"> Mix for 5-8 minutes, or until dough pulls away from the sides. </span></li>
<li><span data-contrast="auto"> Cover and leave to proof in a warm place for about an hour or until doubled in size. </span></li>
<li><span data-contrast="auto"> To make the butter, cut the top off the garlic, drizzle with olive oil, wrap in foil and roast for 30 minutes at 180°C. </span></li>
<li><span data-contrast="auto"> Squeeze out the flesh and mix with melted butter, thyme and Cheddar. </span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C. </span></li>
<li><span data-contrast="auto"> Line a baking tin or oven tray with baking paper. </span></li>
<li><span data-contrast="auto"> Tip dough onto a lightly oiled surface. Knock down dough and divide into four equal portions. </span></li>
<li><span data-contrast="auto"> Roll out dough into 10x20cm rectangles. </span></li>
<li><span data-contrast="auto"> Spread a third of the garlic butter over 3 of them.</span></li>
<li><span data-contrast="auto"> Place them on top of each other, ending with the fourth unbuffered portion.</span></li>
<li><span data-contrast="auto"> Cut into 4 pieces and turn each piece on its side (layers facing up). </span></li>
<li><span data-contrast="auto"> Arrange next to each other snugly in baking tin. Brush with leftover garlic butter and season with salt. </span></li>
<li><span data-contrast="auto"> Cover loosely with clingfilm and leave to rise for 15-20 minutes. </span></li>
<li><span data-contrast="auto"> Bake for 35-45 minutes or until golden. Serve warm.</span></li>

<h3>Method</h3>

<li><span data-contrast="auto"> Halve each garlic clove and, if present, remove the green root in the centre. </span></li>
<li><span data-contrast="auto"> Grate garlic on the small setting of your box grater. </span></li>
<li><span data-contrast="auto"> Add grated garlic and salt to a food processor with the salt and pulse for 2-3 minutes, scraping down every 20 seconds to ensure all the garlic is smooth.</span></li>
<li><span data-contrast="auto"> Add 1 Tbsp oil and blend until incorporated, scraping down the sides of the bowl. </span></li>
<li><span data-contrast="auto"> Repeat with another tablespoon of oil, blending and scraping down until you&#8217;ve used 1 cup of the oil. </span></li>
<li><span data-contrast="auto"> Alternate pouring the lemon juice and oil in a thin steam while blending the mixture until both are finished. You should be left with a creamy, thick dip. </span></li>
<li><span data-contrast="auto"> Serve as a dip with chips, spread on tortillas to make wraps, lather on meat or dollop on mushrooms.</span></li>

<p><strong>Good to know: </strong><span data-contrast="auto">This dip is unique in that the emulsifier is the garlic as opposed to the egg, like a mayonnaise. To start, the garlic cloves need to be completely blended into a smooth paste. <li><span data-contrast="auto"> Scrub and wash beets, then peel and dice evenly into cubes. </span></li>
<li><span data-contrast="auto"> Generously coat beetroot in olive oil and salt, then place on your tray and cover. </span></li>
<li><span data-contrast="auto"> Roast for 1-1 ½ hours, until completely soft and easily sliced with a knife. Cool completely.</span></li>
<li><span data-contrast="auto"> Add lemon juice, garlic and chilli to a blender and blitz until slightly chunky. </span></li>

<li><span data-contrast="auto"> Boil potatoes in salted water until tender. </span></li>
<li><span data-contrast="auto"> Drain and place in a warm oven for 5 minutes to dry out. </span></li>
<li><span data-contrast="auto"> Mash potatoes with milk, butter and salt. </span></li>
<li><span data-contrast="auto"> Spoon into the bowl of a stand mixer fitted with a dough hook. </span></li>
<li><span data-contrast="auto"> Add cake flour, bread flour, eggs, yolk, sugar and yeast. </span></li>
<li><span data-contrast="auto"> Mix for 5–8 minutes, or until dough pulls away from the sides. </span></li>
<li><span data-contrast="auto"> Cover and leave to proof in a warm place for about an hour, or until doubled in size. </span></li>
<li><span data-contrast="auto"> To make the butter, cut the top off the garlic, drizzle with olive oil, wrap in foil and roast for 15 minutes at 180°C. </span></li>
<li><span data-contrast="auto"> Squeeze out the flesh and mix with melted butter, thyme and cheese. </span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C. </span></li>
<li><span data-contrast="auto"> Line a baking tray with baking paper. </span></li>
<li><span data-contrast="auto"> Tip dough out onto a lightly oiled surface. Knock down dough and divide into 4 portions. 13. Roll out the portions into 10cmx20cm rectangles.</span></li>

<li><span data-contrast="auto"> Bring a pot of salted water to the boil and par-cook potatoes for 13-18 minutes. </span></li>
<li><span data-contrast="auto"> Drain and cool in cold water for 5-10 minutes. </span></li>
<li><span data-contrast="auto"> Place the potatoes on a baking tray and press them down with the back of a spoon or mug to ‘smash’ them. </span></li>
<li><span data-contrast="auto"> Wrap the potatoes with the streaky bacon, if using.</span></li>
<li><span data-contrast="auto"> Sprinkle the potatoes with parmesan and sage leaves. Drizzle with oil and season. </span></li>
