<h2><b></b><span data-contrast="auto">Hold up – first of all, what’s behind the restaurant’s name?</span><span data-ccp-props="{}"> </span></h2>
<p><b><span data-contrast="auto">Rebecca:</span></b><span data-contrast="auto"> Oni is short for onigiri, which is a rice ball with various fillings inside and wrapped in nori. It’s what we started out making and selling from home. The name is a play on “How’s your aunty?”. Now, we make a variety of Japanese dishes: Takoyaki, okonomyaki, miso soup, tempura, udon and at least 10 kinds of onigiri. When we recently travelled to Japan, we went over with one empty suitcase and came back with four full ones filled with ingredients to make this menu.</span><span data-ccp-props="{}"> </span></p>
<p><b><span data-contrast="auto">Minchan:</span></b><span data-contrast="auto"> We always bring back special ingredients to use in the restaurant, like this cool soy sauce that only comes from one region of Japan and isn’t even sold outside of the town.</span><span data-ccp-props="{}"> </span></p>

<p><b><span data-contrast="auto">MinChan:</span></b><span data-contrast="auto"> I grew up in South Korea and my favourite childhood foods are takoyaki and samgak-gimbap, which is very simillar to onigiri. I started waitering in restaurants when I was 16, so there was an idea there. When Rebecca and I were travelling in Japan, we saw everyone eating onigiri and we felt that it was just something that Cape Town was missing.</span><span data-ccp-props="{}"> </span></p>

<h2><span data-contrast="auto">Back to karaage – what is it?</span><span data-ccp-props="{}"> </span></h2>
<p><b><span data-contrast="auto">MinChan:</span></b><span data-contrast="auto"> It’s crispy, juicy, very tender deep-fried chicken thighs. It’s usually served as is, kind of like a side, definitely with some lemon and maybe a chilli lime mayo. A lot of people eat it with rice or on top of cabbage. Another way to serve it is with a Japanese curry, which is not as spicy as other curries and is a little sweeter and fruitier.</span><span data-ccp-props="{}"> </span><span data-ccp-props="{}"> </span></p>

<h2><span data-contrast="auto">What makes karaage different to Korean fried chicken and chicken katsu?</span><span data-ccp-props="{}"> </span></h2>
<p><b><span data-contrast="auto">MinChan:</span></b><span data-contrast="auto"> Karaage is very similar to Korean fried chicken, but the differences are in the marinades and the serving sauces. Korea and Japan are very close together, so they share a lot of their cuisine. Katsu is also Japanese but is a chicken cutlet, usually breast, that&#8217;s breaded with panko and then deep-fried.</span><span data-ccp-props="{}"> </span><span data-ccp-props="{}"> </span></p>

<h2><span data-contrast="auto">How do I make karaage at home?</span><span data-ccp-props="{}"> </span></h2>
<p><b><span data-contrast="auto">MinChan:</span></b><span data-contrast="auto"> This is how I’d recommend you do it:</span><span data-ccp-props="{}"> </span></p>
<ol>
<li><span data-contrast="auto">Preferably use boneless chicken thighs but definitely keep the skin on. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">The thighs are marinated in soy sauce, ginger, garlic, sesame oil and sake (we don’t us that, keeping our halal customers in mind). </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">You let it sit like that for a bit, coat it in egg white and then you dip it into your flour mixture, which is a ratio of flour and corn flour or potato starch. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">To create flakes, add a few drops of water or dashi water (a Japanese broth) to the flour mixture before coating. Those flakes get extra crispy once they’re fried. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">An important thing for karaage is triple frying. You fry it for about 40 seconds, let it rest for 30 seconds and repeat twice more.</span><span data-ccp-props="{}"> </span></li>

We’d have three meals a day and in between go to the convenience stores and get onigiri. They’ve also got great desserts. <li><span data-contrast="auto"> In a large bowl, beat the eggs until light and fluffy.</span></li>
<li><span data-contrast="auto"> Mix in the flour, milk, oil, sugar, baking powder, salt and pesto until combined.</span></li>
<li><span data-contrast="auto"> Spray the preheated waffle iron with non-stick cooking spray.</span></li>
<li><span data-contrast="auto"> Pour a small quantity of batter on to the hot waffle iron and cook waffles in batches until golden brown and cooked through.</span></li>

<li><span data-contrast="auto"> Heat all the ingredients in a pot over medium-low. Stir until the sugar has dissolved.</span></li>
<li><span data-contrast="auto"> Increase the heat to medium-high and boil, without stirring, for 15 minutes, until it becomes a caramel colour</span></li>
</ol>
<p><i><span data-contrast="auto">For the fried chicken</span></i><span data-ccp-props="{}"> </span></p>
<ol>
<li><span data-contrast="auto"> Slice each chicken breast lengthwise into 3 pieces. Season with the salt and pepper.</span></li>
<li><span data-contrast="auto"> Whisk the buttermilk, eggs and hot sauce together.</span></li>
<li><span data-contrast="auto"> In a separate bowl, mix the flour, cayenne and origanum together.</span></li>
<li><span data-contrast="auto"> Heat enough oil to deep-fry in a pot over medium-high.</span></li>
<li><span data-contrast="auto"> Coat the chicken in the flour mixture and then in the buttermilk, followed by another layer of flour.</span></li>
<li><span data-contrast="auto"> Deep-fry the chicken in batches until golden brown and cooked through. Set the oil aside.</span></li>
<li><span data-contrast="auto"> Mix the chilli flakes, brown sugar and garlic powder together in a heat-proof bowl. Whisk through ½ cup of the oil that the chicken was fried in. Use this to baste the chicken lightly.</span></li>
</ol>

<li><span data-contrast="auto"> Heat a waffle iron and grease lightly.</span></li>
<li><span data-contrast="auto"> Mix all the dry ingredients together.</span></li>
<li><span data-contrast="auto"> Beat the egg whites until stiff peaks form.</span></li>
<li><span data-contrast="auto"> Mix together the egg yolks, oil, milk and vanilla. Add to the dry ingredients and mix well to combine. Then fold in the egg whites.</span></li>
<li><span data-contrast="auto"> Pour about ⅓ cup of batter into the waffle iron and cook until golden brown and crisp. Repeat until all batter is used.</span></li>
<li><span data-contrast="auto"> Serve warm waffles topped with chicken and and salted syrup.</span></li>

<li><span data-contrast="auto"> Preheat oven to 180°C.</span></li>
<li><span data-contrast="auto"> Mix all the remaining dry ingredients together and season well.</span></li>
<li><span data-contrast="auto"> Heat enough oil to deep-fry the chicken in a large pot.</span></li>
<li><span data-contrast="auto"> Roll each chicken piece in the flour and fry until golden. Arrange on a baking tray and bake for 15 minutes, until cooked.</span></li>

<li><span data-contrast="auto"> Heat some vegetable oil in an ovenproof pan and fry the apples and onions for about 5 minutes, until they start to soften. Remove from the pan.</span></li>
<li><span data-contrast="auto"> Heat some more oil in the pan and brown the pork chops for 1–2 minutes on each side. Add the onions and apples back to the pan.</span></li>
<li><span data-contrast="auto"> Pour over the chicken stock and white wine and transfer to the oven. Cook for 20–25 minutes, until the pork is cooked through and the onions are caramelised.</span></li>

<p><em>For the butter-bean mash </em></p>

<li><span data-contrast="auto"> Heat some oil in a pan over medium heat. Fry the onion and garlic for 5 minutes.</span></li>
<li><span data-contrast="auto"> Add the butter beans, lemon juice and sage and heat through.</span></li>
<li><span data-contrast="auto"> Remove from the heat and add the milk gradually, mashing all the while, until soft and creamy. Season to taste and serve with the pork chops.</span></li>

<li><span data-contrast="auto"> Preheat oven to 200°C and grease a 12-hole muffin tin.</span></li>
<li><span data-contrast="auto"> Place sugar in a pot over medium heat. Cook, stirring gently with a spatula, for 3–4 minutes, until it has melted and turned an amber colour.</span></li>
<li><span data-contrast="auto"> Whisk in the butter. Once it is completely melted, slowly pour in the cream, whisking to combine. Add the salt and set aside to cool.</span></li>
<li><span data-contrast="auto"> Evenly distribute apple slices and thyme in the muffin pan. Bake for 10 minutes, until the apples just begin to soften.</span></li>
<li><span data-contrast="auto"> Roll out the pastry. Cut out 12 circles to fit the holes of the muffin tin.</span></li>
<li><span data-contrast="auto"> Remove muffin tin from oven and drizzle 2 tsp salted caramel over each apple portion. Cover each one with a circle of pastry. Using a sharp knife, poke a hole in the pastry, to allow steam to be released during baking.</span></li>
<li><span data-contrast="auto"> Bake the tartes Tatin for a further 15–20 minutes, until pastry is golden brown and completely cooked through.</span></li>
<li><span data-contrast="auto"> Remove from the oven and allow to cool completely, before carefully inverting to remove from the tin. Dust with icing sugar and serve.</span></li>

<ol>
<li><span data-contrast="auto"> Place the brine ingredients into a pot and bring to a boil. Stir until sugar dissolves and remove from the heat. </span></li>
<li><span data-contrast="auto"> Add 1L cold water and 2 cups ice to the brine then allow to cool completely. </span></li>
<li><span data-contrast="auto"> Meanwhile using a skewer or fork, poke holes into each chicken drumstick (this allows the brine to absorb better). </span></li>
<li><span data-contrast="auto"> Place the chicken into the cold brine, cover and refrigerate for at least 3-4 hours, overnight is best. </span></li>
<li><span data-contrast="auto"> Remove the chicken from the brine and pat dry with paper towel. </span></li>
<li><span data-contrast="auto"> Whisk together the cake flour, salt, pepper and barbecue spice in a bowl. </span></li>
<li><span data-contrast="auto"> Fill two bowls, one with the whisked egg and the other with crushed cornflakes. </span></li>
<li><span data-contrast="auto"> Dip each of the chicken drumsticks into the flour mixture, then egg and lastly cornflakes. Make sure that the chicken is evenly coated. Serve hot.</span></li>

<li><span data-contrast="auto"> In a bowl, whisk together 2 Tbsp Chinese five spice, sugar, garlic powder, chilli flakes, soy sauce, sesame oil, wine and egg until well combined. </span></li>
<li><span data-contrast="auto"> Add the chicken wings and toss to coat. </span></li>
<li><span data-contrast="auto"> Add half the corn flour and toss to coat evenly, creating a wet paste. Set aside to marinate for about 30 minutes, overnight is best. </span></li>
<li><span data-contrast="auto"> Add the remaining corn flour and toss to coat. </span></li>
<li><span data-contrast="auto"> Deep-fry wings in batches for 3-4 minutes (do not cook them all the way through). Drain on paper towel. </span></li>
<li><span data-contrast="auto"> Add a pinch of salt and remaining Chinese five spice to remaining corn flour and whisk to combine. </span></li>
<li><span data-contrast="auto"> Toss the wings lightly into the remaining corn flour mixture and deep-fry in hot oil for another 2-3 minutes or until golden and cooked through. Drain on paper towel. </span></li>

<li><span data-contrast="auto"> Place the chicken into a large bowl and season well. </span></li>
<li><span data-contrast="auto"> Add the buttermilk, sriracha, garlic and coriander and toss well to coat evenly. Set aside to marinate overnight, in the fridge. </span></li>
<li><span data-contrast="auto"> In a large bowl, whisk together the cake flour and seasonings. </span></li>
<li><span data-contrast="auto"> Take about ¼ cup of the buttermilk marinade and add to the flour mixture. Using a fork, whisk it to create large flakes. </span></li>
<li><span data-contrast="auto"> Dip chicken individually (do not shake off excess marinade) into the flour mixture, making sure to coat evenly. </span></li>
<li><span data-contrast="auto"> Deep-fry the chicken in hot oil in batches for about 4-5 minutes or until golden and cooked through. Drain on paper towel. </span></li>
<li><span data-contrast="auto"> Serve while hot with your favourite dipping sauce.</span></li>

<p><b>PULLED PORK</b></p>
<p><b>1. </b>Preheat the oven to 250°C. Trim excess fat from pork and cut into large pieces to fit in a large Dutch oven.</p>
<p><b>2. </b>Combine brown sugar, salt and all the herbs and spices, then season with black pepper. Rub all over the pork.</p>
<p><b>3. </b>Heat the oil in an oven over a medium high heat. Add the pork and sear on all sides. Pour the beer, chicken stock and tomato sauce in and around the pork and mix. Add the bay leaves and cover with a lid.<span class="Apple-converted-space"> </span></p>
<p><b>4. </b>Transfer to the oven and cook for 2–3 hours until tender enough to pull apart with a fork. Remove the pork from oven and let rest.</p>
<p><b>5. </b>Shred the pork using two forks. Toss the shredded meat with the barbecue sauce and set aside.<span class="Apple-converted-space"> </span></p>
<p><b>COLESLAW</b></p>
<p><b>1. </b>Stir all the ingredients together and season to taste.</p>

<p><b>4.</b> Heat some oil in a large pot over medium-high heat.</p>
<p><b>5. </b>Dip the chicken into the flour, shaking off the excess flour and then dip into the buttermilk mixture. Lay into the flour mixture again and fry in batches. Repeat until all the chicken is coated and cooked until golden brown and crispy.<span class="Apple-converted-space"> </span></p>

<p>Store bought pizza dough<strong> 700 g</strong></p>

<p>Grated Parmesan<span class="Apple-converted-space">  </span>to taste<span class="Apple-converted-space"> </span></p>
<p><b>For the TOMATO SAUCE</b></p>
<p><b>1. </b>Heat the butter in a pan over medium heat. Add the onion and fry until soft. Add in tomato paste and fry for 1 minute. Add in the chopped tomatoes, sugar and herbs, bring to the boil and then reduce the heat. Simmer on low for 15–20 min.<span class="Apple-converted-space"> </span></p>
<p><b>FOR THE PIZZA</b></p>
<p><b>1. </b>Preheat oven to 230ºC and coat the bottoms and side of a large springform cake tin with cooking spray.</p>
<p><b>2. </b>Roll out your pizza dough on a lightly floured surface until 1 cm thick. Line your cake tin with the dough.</p>
<p><b>3. </b>Sprinkle over 1 cup mozzarella cheese and top with the Italian sausage.<span class="Apple-converted-space"> </span></p>
<p><b>4. </b>Pour over the tomato sauce and top with the Parmesan and remaining mozzarella. Bake for 25–30 minutes. Remove from the oven and allow to sit for 5–10 minutes.</p>

<p>White sugar <strong>1 tbsp</strong></p>
<p>Water<strong><span class="Apple-converted-space"> ⅓</span> cup+ 2 tbsp</strong></p>
<p>Corn flour<strong> 2 tbsp</strong></p>
<p>Lemon juice <strong>1 tbsp</strong></p>
<p>Shortcrust pastry rolls, thawed<strong> 2–3</strong></p>
<p>Eggs, whisked <strong>1<span class="Apple-converted-space"> </span></strong></p>
<p><b>1. </b>Melt the butter in a pan over a medium-high heat and add the apples. Stir to coat the fruit with butter and cook, stirring occasionally.</p>
<p><b>2. </b>Whisk together the spices, salt and sugars in a bowl and sprinkle over the apples. Cook for 2–3 minutes. Add<span class="Apple-converted-space">  </span>cup water, stirring to combine. Lower the heat and cook for 5–7 minutes, until the apples have started to soften.<span class="Apple-converted-space"> </span></p>
<p><b>3. </b>Combine the corn flour and leftover water in a bowl and mix to form a paste. Add the apple mixture and continue to cook, stirring occasionally, another 3–5 minutes. Remove the pan from the heat and add the lemon juice. Mix well to combine. Transfer the apple filling to a bowl and let it cool.</p>
<p><b>TO ASSEMBLE</b></p>
<p><b>1. </b>Grease a pie dish with oil or softened butter, working it into any grooves. Line the pie dish with 1 roll of pastry, leaving 1–2cm hanging over the edges. Use a little water to patch pieces together if necessary.</p>
<p><b>2. </b>Scrunch up a piece of baking paper, flatten out and line the pie crust. Fill with baking beans and blind bake for 15 minutes. Remove the weights and bake the pastry for a further 15 minutes until it is set but not browned. Trim off overhanging pastry with a serrated knife and set aside until cooled.</p>
<p><b>3. </b>Add the apple filling into the pie shell and flatten until even in the tin, spreading it flat with the back of a spoon. Cut the second roll of pastry into a 1.5 cm thick strip and place on top of the pie in a lattice pattern (see tip below). Brush the pastry with the egg wash and sprinkle over with some brown sugar.<span class="Apple-converted-space"> </span></p>
<p><b>4. </b>Bake until the pastry is golden and crisp, about 45 minutes to 1 hour. Allow to cool for 15 minutes.<span class="Apple-converted-space"> </span></p>
<p><b>5. </b>Slice and enjoy with ice cream, flaked almonds and caramel sauce if desired.</p>

<p class="p1"><b>SERVES</b> 6 <b>// COOKING TIME </b>45 mins, plus 2 hours marinating time</p>
<p class="p3"><span class="s2"><b>INGREDIENTS<br />
</b></span><b>300 ml </b>buttermilk<br />
<b>1 tbsp</b> paprika<br />
<b>1 tsp</b> cayenne pepper<br />
<b>6</b> chicken legs<br />
<b>6</b> chicken thighs<br />
Vegetable oil, to deep-fry<br />
<b>200g</b> flour<br />
<b>1 tbsp</b> salt<br />
<b>100g</b> mielie meal<br />
<b>3</b> eggs, beaten<br />
<b>2</b> lemons, cut into wedges</p>
<p class="p3"><span class="s2"><b>METHOD<br />
</b></span><b>1.</b> Mix together the buttermilk, paprika and cayenne pepper.<br />
<span class="s2"><b>2.</b> Place the chicken pieces in the buttermilk mixture and leave</span> to marinate for at least 2 hours. For best results, marinate for 2 days (but not longer).<br />
<b>3.</b> Preheat the oven to 180°C and heat the oil in a deep pot.<br />
<b>4.</b> Remove the chicken and set the remaining marinade aside. Prepare three dipping bowls as <span class="s2">follows: 1. Marinade; 2. Flour, salt</span> and mielie meal; 3. Beaten eggs.<br />
<span class="s2"><b>5.</b> Dip the chicken in the bowls in this order: marinade, flour/mealie meal mixture, egg, then the flour </span>again. Firmly pat the flour on to <span class="s2">the chicken. Do not shake it off.<br />
</span><span class="s2"><b>6.</b> Deep-fry the chicken in batches for a few minutes on</span> each side, until golden brown.<br />
<span class="s2"><b>7.</b> Place on a baking tray and bake</span> <span class="s2">for 15 minutes, until cooked. Serve</span> with lemon wedges.</p>
