Gruyere and Emmental, a dynamic combination of nutty richness and stretchy deliciousness, are typically used in traditional Swiss fondue. You do you, though. If you&#8217;re feeling rebellious, add a splash of sharp Cheddar or a little Fontina for creaminess. Just promise that you won&#8217;t use cheese that has already been shredded. <h3>Ingredients</h3>
<p><span data-contrast="auto">3-4 (300g each) heads cauliflower, quartered</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Salt and milled pepper</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Glug oil</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">¼ cup butter</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">¼ cup flour</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2 cups milk</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">200g Emmental, grated</span><span data-ccp-props="{}"><br />

</span><span data-contrast="auto">200g mature Cheddar, grated</span><span data-ccp-props="{}"><br />

</span><span data-contrast="auto">Handful sage and thyme, chopped</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Crusty bread, for serving</span><span data-ccp-props="{}"> </span></p>
<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto"> Place cauliflower chunks in a deep oven-proof dish. Season, coat in oil and roast for 20-25 minutes until it starts to brown.</span></li>
<li><span data-contrast="auto"> Prepare sauce by melting butter in a pot, whisk in the flour and cook for 1 minute.</span></li>
<li><span data-contrast="auto"> Gradually add milk while whisking. Boil for 3-5 minutes.</span></li>
<li><span data-contrast="auto"> Add the cheeses, grate in some nutmeg, if using, and mix until the sauce is smooth and velvety.</span></li>
<li><span data-contrast="auto"> Top the roasted cauliflower with herbs and pour sauce over the roasted cauliflower.</span></li>
<li><span data-contrast="auto"> Increase oven to 220°C and bake for another 8-12 minutes.</span></li>
<li><span data-contrast="auto"> Serve warm out of the oven.</span></li>

<span data-contrast="auto">2 onions, thinly sliced</span><br />
<span data-contrast="auto">2 cloves garlic, finely grated</span><br />
<span data-contrast="auto">1 roll (400g) puff pastry, defrosted</span><br />
<span data-contrast="auto">1 punnet (300g) cherry tomatoes, halved</span><br />
<span data-contrast="auto">6 sprigs thyme, halved</span><br />
<span data-contrast="auto">Salt and milled pepper</span><br />
<span data-contrast="auto">1 Tbsp (15ml) brown sugar</span><br />
<span data-contrast="auto">1 round (125g) Camembert Basil, for serving </span><span data-ccp-props="{}"> </span></p>
<h3><span data-ccp-props="{}">Method </span></h3>
<ol>
<li><span data-contrast="auto"> Heat butter and olive oil in a pan over medium heat. </span></li>
<li><span data-contrast="auto"> Sauté onions for 10-12 minutes until caramelised. Add garlic, cook 2 minutes more and set aside.</span></li>
<li><span data-contrast="auto">Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto">Roll pastry out on a floured surface to about 3mm thick. Cut out 12 circles using a cookie cutter. Chill discs until firm.</span></li>
<li><span data-contrast="auto">Pack out 12 little heaps (slightly smaller than your pastry discs) of tomatoes, onion mixture and thyme pieces on a lined baking tray. Season, drizzle with oil and sprinkle with sugar. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Cover heaps with a pastry discs and press down to secure. Prick a steam hole on top of each pastry disc.</span></li>
<li><span data-contrast="auto">Bake for 23-28 minutes until golden and puffed. Cool on the tray for 10 minutes.</span></li>
<li><span data-contrast="auto">Arrange pastry in a wreath on a serving plate, with the filling facing up.</span></li>
<li><span data-contrast="auto">Score a criss-cross pattern into Camembert, drizzle with oil and bake for 8-10 minutes until inside is molten. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Place cheese in the centre of the wreath. Scatter with basil and serve immediately. </span></li>

<li><span data-contrast="auto"> Place cauliflower chunks into a deep ovenproof dish, season and drizzle with oil. </span></li>
<li><span data-contrast="auto"> Roast for 25-30 minutes or until lightly golden. </span></li>
<li><span data-contrast="auto"> Melt butter in a pot over medium heat, then stir through flour until smooth. Cook for 1 minute. </span></li>
<li><span data-contrast="auto"> Gradually add milk while continuously whisking. Cook for 3-5 minutes once all the milk has been added, </span>or until sauce has thickened. <span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Stir through cheeses and nutmeg (if using) and mix until smooth. Season. </span></li>
<li><span data-contrast="auto"> Top roasted cauliflower with cheese sauce and scatter with herbs. </span></li>
<li><span data-contrast="auto"> Increase heat to 220°C and bake for another 10-12 minutes. </span></li>

<p class="p1"><b>INGREDIENTS<br />
</b><b>For the braaibroodjies<br />
</b><b>1 loaf</b> bread, unsliced<br />
<b>4 tbsp</b> butter<br />
<b>½ cup</b> tomato jam<br />
<b>2</b> garlic cloves, peeled and crushed<br />
<b style="font-size: 1em;">1 tsp </b><span style="font-size: 1em;">onion flakes<br />
</span><b style="font-size: 1em;">Pinch</b><span style="font-size: 1em;"> cayenne pepper<br />
</span><span style="font-size: 1em;">Salt and black pepper<br />
</span><b>For the cheese fondue<br />
</b><b>1 cup</b> white wine<br />
<b>3 tbsp</b> cornflour<br />
<b>240 g</b> Gouda, grated<br />
<b>1 tsp </b>cayenne pepper<br />
<b>1 tsp</b> mustard powder<br />
<b>Pinch</b> nutmeg<br />
Salt and black pepper</p>
<p class="p1"><b>METHOD<br />
</b><b>For the braaibroodjies<br />
</b><b>1.</b> Slice the loaf of bread into quarters, lengthways.<br />
<b>2. </b>Spread 2 slices with butter and tomato jam.<br />
<b>3. </b>Sprinkle with garlic, onion flakes, cayenne, salt and pepper. Sandwich with the other slices.<br />
<b>4. </b>Braai over hot coals until bread is charred on both sides and filling is heated. Cut into fingers.<br />
<b>For the cheese fondue<br />
</b><b>1. </b>Make a slurry by mixing a little bit of wine with the cornflour.<br />
<b>2. </b>Bring the rest of the wine to a simmer. Gradually whisk in the cheese, stirring until it is melted.<br />
<b>3. </b>Add the slurry, continuing to whisk until mixture is smooth and thick.<br />
<b>4. </b>Season with cayenne, mustard, nutmeg, salt and pepper. Grab your braaibroodjie fingers and enjoy your braaibroodjie cheese fondue!</p>
<p class="p1"><b>Fondue Tip:</b><i> </i>You’ll need to keep the fondue warm and melty while you’re eating it. An easy way to do this is to prepare it in a slow cooker and serve it straight out of the pot. You can also place a warmer tray on the table.</p>
