<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Combine sauce ingredients in a pan and heat up until warm. Switch off heat and leave to infuse.</span></li>
<li><span data-contrast="auto"> Combine filling ingredients, mixing thoroughly to ensure even distribution of ingredients.</span></li>
<li><span data-contrast="auto"> Submerge a rice paper wrapper in warm water until just soft , turning translucent.</span></li>
<li><span data-contrast="auto"> Remove and lay down on a chopping board. Fold in 4 sides of wrapper, to create a 8cm square.</span></li>
<li><span data-contrast="auto"> Place 2 tsp filling in the centre, then bring corners of the rice paper wrapper up to the centre, bunching up the ends to enclose filling. Set aside on baking paper. Continue with remaining wrappers and filling.</span></li>
<li><span data-contrast="auto"> Place parcels in a baking paper-lined steamer. Steam over medium heat for 8-10 minutes.</span></li>
<li><span data-contrast="auto"> Reheat sauce just before serving.</span></li>
<li><span data-contrast="auto"> Serve parcels in a bowl of sauce, sprinkled with coriander leaves.</span></li>

<li><span data-contrast="auto">In a large, greased baking tray, combine all the muesli crumble ingredients and toss through to combine.</span></li>
<li><span data-contrast="auto">Bake for about 10-15 minutes, stirring regularly until golden and toasted. Remove and set aside to cool.</span></li>
<li><span data-contrast="auto">Place plums or nectarines into a baking tray or skillet.  </span></li>
<li><span data-contrast="auto">Whisk together orange juice, vanilla and brown sugar. Pour mixture over the stone fruit and bake for about 20-25 minutes or until softened and sticky.</span></li>
<li><span data-contrast="auto">Whisk together the crème fraiche and honey, then set aside.</span></li>

<li><span data-contrast="auto">Heat oil in a pan and sauté onions and red peppers for about 8-10 minutes or until onions are golden.</span></li>
<li><span data-contrast="auto">Add garlic, fry for a minute and then add tomato paste and spices. Stir and fry until sticky, about 1-2 minutes.</span></li>
<li><span data-contrast="auto">Add chopped tomatoes and stock, then bring to a simmer, cooking for 10-12 minutes.</span></li>
<li><span data-contrast="auto">Cut the tops off the buns, leaving the bottom-half 2-3cm Press down the inside of buns, leaving a clear border all around (this will help hold the shakshuka sauce later).</span></li>
<li><span data-contrast="auto">Brush inside of buns (and the border) with some butter or oil.</span></li>
<li><span data-contrast="auto">Cut the cheese and place inside buns. Bake for 4-6 minutes or until cheese is molten and bread is crisp.</span></li>
<li><span data-contrast="auto"> Spoon filling into bread cavities, place an egg inside and top with coriander. Serve immediately.</span></li>

<h2><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h2>
<ol>
<li><span data-contrast="auto">For the whipped feta, combine all ingredients into a blender and blend until smooth. Set</span></li>
<li><span data-contrast="auto">For the crêpes, heat a pot of water and blanch the rocket and baby spinach for 30 seconds. Immediately plunge the greens into a bowl of ice water. Squeeze out any excess water.</span></li>
<li><span data-contrast="auto">Place the greens into a blender with the egg, milk and water. Blend until smooth.</span></li>
<li><span data-contrast="auto">Sift the flour and baking powder into a bowl and add salt.</span></li>
<li><span data-contrast="auto">Add herb mixture and whisk to combine.</span></li>
<li><span data-contrast="auto">Place ½ Tbsp of butter into a shallow pan and pour a cup of the batter into the pan. Swirl the pan to spread the batter evenly and cook for 1-2 minutes per side or until cooked. Place the cooked crêpes on a plate and cover with a clean tea towel until needed.</span></li>
<li><span data-contrast="auto">For the filling, add the butter and oil to a pan over medium heat.</span></li>
<li><span data-contrast="auto">Fry leeks for about 3-4 minutes, then add garlic, peas and tomatoes and fry for another 3-4 minutes. Season well.</span></li>
<li><span data-contrast="auto">Fill each crêpe with whipped feta, pea mixture and a poached egg. Enclose the crêpes and serve with herbs or micro leaves, lemon wedges and enjoy.</span></li>

This allows the alcohol to burn off and leave behind a rich flavour. Once the alcohol is completely burnt out, the flames die out. </span><span data-ccp-props="{}"> </span></p>
<h2><span data-contrast="auto">Why do we flambe? </span><span data-ccp-props="{}"> </span></h2>
<p><span data-contrast="auto">Flambeing food helps to enhance its flavour. As the alcohol burns out, sugars in the alcohol and food will caramelise. Plus, it offers a dramatic visual effect for an impressive tableside party trick. </span><span data-ccp-props="{}"> </span></p>
<h2><span data-contrast="auto">How to flambe </span><span data-ccp-props="{}"> </span></h2>
<p><span data-contrast="auto">When your dish is just about done and the pan is still hot, remove it from the heat and gently pour in the alcohol (such as rum or brandy). Immediately light the alcohol using a long lighter or match, or by tipping your skillet toward the open flame of a gas hob. Flames will appear so move your hand away quickly after lighting, and stand back as the alcohol burns. </span><span data-ccp-props="{}"> </span></p>
<h2><span data-contrast="auto">Alcohol to use </span><span data-ccp-props="{}"> </span></h2>
<p><span data-contrast="auto">To guarantee a clean burn, use liquors such as brandy, rum, vodka or whisky, ideally containing between 40-60% alcohol. Low- alcohol wines, beers, or liqueurs should not be used since they will not ignite. </span><span data-ccp-props="{}"> </span></p>
<h2><span data-contrast="auto">Safety first </span><span data-ccp-props="{}"> </span></h2>

<li><span data-contrast="auto"> Flambe in a well-ventilated area.</span></li>
<li><span data-contrast="auto"> To avoid flare-ups, remove the pan from the heat source before adding alcohol.</span></li>
<li><span data-contrast="auto"> The alcohol needs to heat up before it can ignite. </span></li>
<li><span data-contrast="auto"> Never pour alcohol straight from the bottle into a hot pan. </span></li>
<li><span data-contrast="auto"> Keep an eye out for high flames; to be safe, tie your hair back anddon&#8217;tlean over the pan. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Always keep a fire extinguisher on-hand.</span></li>
