<h3><span data-ccp-props="{}">Method </span></h3>
<ol>
<li><span data-contrast="auto">Heat half the oil in a heavy-based pot over medium heat. </span></li>
<li><span data-contrast="auto">Add the brinjals and fry on both sides until golden brown. Remove and set aside. </span></li>
<li><span data-contrast="auto">Heat remaining oil in the same pot and sauté onion and cumin seeds until fragrant and soft, about 5-8 minutes.</span></li>
<li><span data-contrast="auto">Add garlic, ginger, chilli and spices, then saute for about 3 minutes. </span></li>
<li><span data-contrast="auto">Tip in tomatoes, add sugar and simmer for 8-10 minutes.</span></li>
<li><span data-contrast="auto">Add sweet potatoes and water, cook for another 15-20 minutes. </span></li>
<li><span data-contrast="auto">Stir in fried brinjals and cook for 10 more minutes, stirring occasionally and adding extra water if needed. </span></li>
<li><span data-contrast="auto">Add a generous squeeze of lemon juice and season. </span></li>
<li><span data-contrast="auto">Stir through coriander and serve with bread on the side. </span></li>

<li><span data-contrast="auto"> Add the curry powder and turmeric and fry until fragrant, about 1 minute.</span></li>
<li><span data-contrast="auto"> Pour in the stock, coconut milk and fish sauce, reduce the heat and simmer for 5 minutes until slightly reduced.</span></li>

<li><span data-contrast="auto"> Heat 2 tablespoons of the vegetable oil in a pot over medium heat. Brown the chicken in batches, until almost cooked through. Remove from the pot and set aside.</span></li>
<li><span data-contrast="auto"> Add the rose petals, ginger, garlic, garam masala, paprika, cardamom, salt, turmeric and almonds to a food processor. Blend until smooth.</span></li>
<li><span data-contrast="auto"> Add the remaining vegetable oil and the butter to the pot. Add the onions and cook until caramelised, about 5 minutes.</span></li>
<li><span data-contrast="auto"> Add the blended spice mix and fry for 2 minutes, until fragrant.</span></li>
<li><span data-contrast="auto"> Reduce the heat and mix in the tomato paste and yoghurt. Simmer for 3 minutes, then add the chicken.</span></li>
<li><span data-contrast="auto"> Lower the heat and cook for 10 minutes, until the chicken is done. Remove from the heat, stir in the cream and season with salt and pepper.</span></li>
<li><span data-contrast="auto"> Top your chicken korma with flaked almonds and rose petals and serve with warm rotis and lemon wedges.</span></li>

<li><span data-contrast="auto">Add oil to a large pot and fry curry leaves, bay leaf, cinnamon stick and star anise for 2-3 minutes over medium heat. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Add onions and sauté for about 3-5 minutes or until lightly golden. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Stir through garlic and ginger paste, curry powder and turmeric and fry for 1 minute. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Add another glug of oil, stir in meat and brown for about 6-8 minutes. </span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto">Add onions, water and a pinch of salt and cook for about 20-25 minutes, stirring occasionally until caramelised. Set</span></li>
<li><span data-contrast="auto">In a separate pot, gently heat milk, bay leaves, onion, garlic and peppercorns for about 8-10 minutes.</span></li>
<li><span data-contrast="auto">Remove milk from heat, cover and set aside for 10 minutes to infuse. Strain out aromatics.</span></li>
<li><span data-contrast="auto"> Melt butter in a large pot. Remove from heat and vigorously whisk in flour until a smooth paste forms.</span></li>
<li><span data-contrast="auto">Return to the heat and pour in ½ up infused milk, whisking continuously.</span></li>
<li><span data-contrast="auto">Add remaining milk in batches, allowing sauce to thicken slightly before the next addition. (This should take about 8-10 minutes).</span></li>
<li><span data-contrast="auto">Season and stir through the paprika.  </span></li>
<li><span data-contrast="auto">Remove from heat and stir through cheese. Set</span></li>
<li><span data-contrast="auto">Stir cooked pasta, onion mixture, mustard, thyme and cayenne pepper through sauce, making sure to coat well.</span></li>
<li><span data-contrast="auto">Spoon mixture into a 30cm ovenproof dish, top with remaining cheese and grill in the oven for about 10-15 minutes or until bubbly and golden. </span></li>

<li><span data-contrast="auto"> Pat down your steaks using some paper towels. Season both sides of each steak evenly with salt and pepper. Drizzle with a little bit of olive oil and massage into the steak. Cover and set aside. Allow to come to room temperature before cooking.</span></li>
<li><span data-contrast="auto"> Heat a griddle pan (or braai, or grill) to high heat.</span></li>
<li><span data-contrast="auto"> Once smoking, add your steak (cooking one at a time depending on the size of your pan) and allow it to cook for 3-4 minutes to create </span>a caramelised exterior.<span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Once the cooking side is nice and brown, use a pair of tongs to turn the steak on to its other side. Cook for another 3-4 minutes to medium rare (or your desired doneness). </span></li>
<li><span data-contrast="auto"> Remove from the heat and set the steak on a wooden board to rest for 10 minutes before slicing.</span></li>
</ol>
<p><i><span data-contrast="auto">For the chimichurri</span></i><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto"> Add the garlic, chilli, parsley, oregano, salt and a crack of pepper to a bowl. Using a spoon, mix and press together the ingredients.</span></li>
<li><span data-contrast="auto"> Add the vinegar and oil and stir through. Taste and season as needed. Set aside until serving.</span></li>
</ol>
<p><i><span data-contrast="auto">For the shoestring fries</span></i><span data-ccp-props="{}"> </span></p>
<ol>
<li><span data-contrast="auto"> Using a mandoline slicer (or a very sharp knife), cut the potatoes into very thin slices. Once sliced, use a knife to cut long thin rectangles to make fries. Place the cut potatoes in water while you’re busy with the rest to prevent browning.</span></li>
<li><span data-contrast="auto"> Heat a pot of oil until very hot, test by adding one fry to the oil. When it starts sizzling, the oil is ready.</span></li>
<li><span data-contrast="auto"> Toss the fries in flour to coat lightly.</span></li>
<li><span data-contrast="auto"> Add the fries in batches and cook until golden and crispy. Be careful not to overcook as they will burn.</span></li>
<li><span data-contrast="auto"> Remove using a slotted spoon and place on a paper towel to drain. Sprinkle the crispy fries with sea salt to season.</span></li>
<li><span data-contrast="auto"> To serve, slice your steak and top with a drizzle of chimichurri and crispy shoestring fries on the side. Add some mayonnaise or tomato sauce to have with your fries. Enjoy!</span></li>

</span><span data-contrast="auto">3 slabs (90g each) 70% dark chocolate </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2 slabs (90g each) good-quality milk chocolate </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2 cup (600ml) cream </span><span data-ccp-props="{}"><br />

<h3><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Place gelatine and water in a bowl and stir quickly to combine. Set aside for 10 minutes to bloom (absorb liquid). </span></li>
<li><span data-contrast="auto"> Create a double-boiler by placing a small pot filled all the way with water on the heat.  Bring to a simmer and place a tight-fitting metal or glass bowl on top. </span></li>
<li><span data-contrast="auto">Place chocolate in the bowl and stir until chocolate is (Your bowl should never be too hot to touch by hand, as chocolate will then split.) </span></li>
<li><span data-contrast="auto">Whisk cream and castor sugar to stiff peaks. </span></li>
<li><span data-contrast="auto">Mix warm (not hot) espresso and bloomed gelatine together, whisking until smooth. (If there are any granules left, microwave for 5-8 seconds until melted, careful not to let gelatine get hot.) </span></li>
<li><span data-contrast="auto">Mix chocolate and cream together, then add gelatine mixture. </span></li>
<li><span data-contrast="auto">Spoon the mixture into a 20cm serving dish or 6-8 ramekins. </span></li>
<li><span data-contrast="auto">Set for 4-5 hours, or overnight for best results. </span></li>
<li><span data-contrast="auto">Serve straight from the fridge, sprinkled with peanut butter brittle chunks and dusted with cocoa powder, if you like.</span></li>

<li><span data-contrast="auto"> Heat a glug of oil in a large pot and fry onions, curry leaves, garlic and ginger until the onions are fragrant and translucent. </span></li>
<li><span data-contrast="auto"> Add spices and fry for 2 minutes until fragrant. Stir in tomato paste and sugar and cook for 1 minute.</span></li>
<li><span data-contrast="auto">Pour in stock and coconut milk or cream, stir and allow to simmer on a low heat for 12-15 minutes.</span></li>
<li><span data-contrast="auto">Cover with a lid and poach fish and mussels in the liquid for 8-10 minutes. </span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> Fill a small pot with water to about 10cm full and bring to a simmer.</span></li>
<li><span data-contrast="auto">Place a tight-fitting glass or stainless-steel bowl over simmering water. (Make sure the base of the bowl does not touch the water) </span></li>
<li><span data-contrast="auto"> Add egg yolks, vinegar and garlic into the bowl and whisk for about 2-3 minutes or until thickened.</span></li>
<li><span data-contrast="auto">Whisk in half the lemon and orange juice, then remove bowl from the heat. </span></li>
<li><span data-contrast="auto"> Remove any white solids from the top of the melted butter. </span></li>
<li><span data-contrast="auto"> Whisk egg yolk mixture with an electric whisk or stick blender while gradually adding in the melted butter until the mixture resembles a mayonnaise-like texture. </span></li>
<li><span data-contrast="auto"> Whisk in remaining lemon and orange juice and season to taste. Keep the citrus sauce warm on top of a bowl of lukewarm water. </span></li>
<li><span data-contrast="auto"> Pat squid dry with paper towel and season well.</span></li>
<li><span data-contrast="auto">Lightly dust squid in flour, dusting off excess. </span></li>
<li><span data-contrast="auto"> Heat oil in a pan until almost smoking and fry squid for 1 minute per side. </span></li>
<li><span data-contrast="auto">Add some of the butter, garlic and chilli and fry for another minute. Set aside. </span></li>

<li><span data-contrast="auto"> Heat sesame oil in a pot and fry garlic, ginger, chilli and spring onion for 1-2 minutes or until fragrant. </span></li>
<li><span data-contrast="auto">Add remaining sauce ingredients (except butter and flour) and cook for another 5 minutes. </span></li>
<li><span data-contrast="auto"> Rub together the butter and flour with your hands to create pea-sized balls. </span></li>
<li><span data-contrast="auto">Add the balls, one at a time into sauce while whisking until dissolved and sauce has thickened. </span></li>
<li><span data-contrast="auto">Remove from the heat and keep warm. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Pat the fish dry, season and dust in some flour, shaking off the excess.</span></li>

<p>Double-cream yoghurt <strong>1 cup<span class="Apple-converted-space"> </span></strong></p>
<p><b>METHOD</b></p>
<p><b>1. </b>Preheat the oven to 180ºC. Place the pumpkin and brinjal on separate baking trays. Toss with oil and cumin seeds.</p>
<p><b>2. </b>Roast the brinjal for 20 min and pumpkin for 40 min.<span class="Apple-converted-space"> </span></p>
<p><b>For the dhal</b></p>
<p><b>1. </b>Add the oil and onion to a pot over medium heat and fry. for 4 min. Add the spices, chilli, garlic and ginger. Fry for 1 min.<span class="Apple-converted-space"> </span></p>
<p><b>2. </b>Add the tomatoes and stock. Bring to a boil, then reduce to a simmer and cover. Cook for 10 min. Add the coconut milk and lentils and cook for 7–10 minutes. Add the veggies.</p>
<p><b>For the turmeric rice</b></p>
<p><b>1. </b>Cook the butter and garlic over medium heat for 1 min until fragrant. Add the turmeric and fry for 15 seconds.</p>
<p><b>2.</b> Add the rice and stir, then add the stock and bay leaf.</p>
<p><b>3. </b>Bring to the boil, then reduce to a low simmer. Cook for 12 minutes or until all the water has absorbed and the rice is soft and fluffy. Remove from the heat and leave, covered, to steam for 5 minutes.</p>
<p><b>To serve</b></p>
<p><b>1. </b>Divide the rice between serving bowls and top with the dhal. Garnish with the coriander sprigs and serve with the poppadoms and yoghurt on the side.</p>

<p><b>1. </b>Combine the fish, oil and turmeric into a bowl. Toss to coat, ensuring that all pieces of fish are covered.<span class="Apple-converted-space"> </span></p>
<p><b>2. </b>Add the oil to a deep pan over medium heat. When hot, add the mustard seeds. When they begin to pop, add the curry leaves and onion. Stir for 5 minutes until the onion is soft.</p>
<p><b>3. </b>Add the chilli, garlic, ginger and turmeric. Stir for about 30 seconds.</p>
<p><b>4. </b>Add the tinned tomatoes, coconut milk and veg stock. Bring to the boil, then reduce to a simmer and cook for 15–20 minutes until reduced and thick.</p>
<p><b>5. </b>Add the fish to the curry and simmer until cooked, 10 min.<span class="Apple-converted-space"> </span></p>

</b><b>1. </b>Heat the oil in a deep pan over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.<br />
<b>2. </b>Add the garlic, chilli, ginger and fennel seeds and stir fry for 1-2 minutes.<br />
<b>3. </b>Add the curry powder and turmeric and fry until fragrant, about 1 minute.<br />
<b>4. </b>Pour in the stock, coconut milk and fish sauce, reduce the heat and simmer for 5 minutes until slightly reduced.<br />
<b>5.</b> Add the fish and simmer until cooked through, about 5 minutes. Remove from the heat and stir through the lemon juice<br />
<b>6. </b>Garnish the coconut fish curry with fresh coriander, and serve with rice and oven baked wraps on the side.</p>

<p class="p1"><b>SERVES</b> 4 <b>// COOKING TIME</b> 30 min</p>
<p class="p4"><span class="s1"><b>INGREDIENTS<br />
</b></span><b>1 tbsp</b> coconut oil<br />
<b>½</b> onion, peeled and chopped<br />
<b>3 cloves</b> garlic, peeled and crushed<br />
<b>1 tbsp</b> ginger, peeled and finely chopped<br />
<b>1</b> small red chilli, seeded and finely chopped<br />
<b>2 tbsp</b> medium curry powder<br />
<b>½ tsp</b> yellow mustard seeds<br />
<b>½ tsp</b> fennel seeds<br />
<b>600 ml</b> coconut milk<br />
<b>1 tbsp</b> sugar<br />
<b>300 g</b> hake fillets (or other white fish), cut into 5 cm pieces<br />
<b>1</b> lime, juice<br />
Salt and pepper</p>
<p class="p4"><span class="s1"><b>METHOD<br />
</b></span><b>1.</b> Heat the oil in a pot. Fry the onion, garlic, ginger and chilli for 3–4 minutes. Add the curry <span class="s2">powder, and mustard and fennel</span> seeds, and cook for 3 minutes, until the onion is soft.<br />
<b>2.</b> Add coconut milk and sugar and bring to the boil. Lower the heat and simmer for 5 minutes, until sauce is slightly reduced.<br />
<b>3.</b> Add the fish fillets and cook <span class="s2">for another 10–12 minutes, until</span> just done.<br />
<span class="s3"><b>4.</b> Season with lime juice, salt and pepper.</span></p>
