<li><span data-contrast="auto"> Shape the mixture into six 2cm-thick patties. Rest on a baking tray.</span></li>
<li><span data-contrast="auto">Combine cucumber-garlic yoghurt sauce ingredients and refrigerate.</span></li>
<li><span data-contrast="auto">Add oil to a pan over medium-high heat. </span></li>
<li><span data-contrast="auto"> Cook patties in batches of two for 10–12 minutes, flipping halfway through, until cooked. Drain on kitchen towel. </span></li>

<li><span data-contrast="auto">Roll dough out on a lightly floured surface to about 5mm thick. Shape into a rectangle to fit a deep baking dish.</span></li>
<li><span data-contrast="auto">Combine tomato sauce, dried herbs and Spread mixture over the dough, making sure to leave a clean 2cm border.</span></li>
<li><span data-contrast="auto">Bake pizza base for 15 minutes until half cooked and slightly puffed.</span></li>
<li><span data-contrast="auto">Meanwhile, heat oil in a large pan and brown mince for about 6-8 minutes.</span></li>
<li><span data-contrast="auto">Stir in garlic and paprika and cook for another 5 minutes, adding more oil if necessary. Season well.</span></li>
<li><span data-contrast="auto">Top par-baked pizza base with mince mixture.</span></li>
<li><span data-contrast="auto">Sprinkle with cheese and bake for another 12-15 minutes or until dough is cooked and cheese is bubbling.</span></li>

<li><span data-contrast="auto"> Cook the noodles as per package instructions, drain and set aside.</span></li>
<li><span data-contrast="auto"> In a bowl, whisk together the honey, soy sauce, oil, white wine vinegar and garlic.</span></li>
<li><span data-contrast="auto"> Add the beef strips and mix, making sure to coat them. Leave to marinate for 1 hour.</span></li>
<li><span data-contrast="auto"> Remove beef from the marinade and toss through the corn flour to coat. Reserve the leftover marinade.</span></li>
<li><span data-contrast="auto"> Heat a glug of oil in a large pan or wok and fry the marinated beef in batches until browned but not fully cooked. Transfer to a plate.</span></li>
<li><span data-contrast="auto"> In the same pan, heat the beef stock, sugar and ginger. Bring to the boil, then add the broccoli and cover. Lower heat and steam until tender, about 2 minutes.</span></li>
<li><span data-contrast="auto"> Add the beef, cooked noodles and reserved marinade and mix well. </span></li>
<li><span data-contrast="auto"> Fry for a further 4 minutes, until the beef is fully cooked.</span></li>
<li><span data-contrast="auto">Serve chow mein garnished with chopped spring onions and sesame seeds.</span></li>

<span class="s4"><b>½</b></span> <span class="s4"><b>tsp</b></span> turmeric<br />
Salt and lemon pepper<br />
<span class="s4"><b>500</b></span> <span class="s4"><b>ml</b></span> soda water<br />
<span class="s4"><b>800g</b></span> hake, divided in 4<br />
<span class="s4"><b>5</b></span> potatoes, peeled<br />
Vegetable oil, to deep-fry<br />
Potato spice<br />
<span class="s4"><b>1</b></span> lemon, cut into wedges</p>
<p class="p5"><span class="s3"><b>METHOD<br />
</b></span><span class="s4"><b>1.</b></span> Mix flour, cornflour, turmeric and a pinch of salt.<br />
<span class="s4"><b>2. </b></span>Whisk in the soda water until the batter is smooth.<br />
<span class="s4"><b>3.</b></span> Season the hake with salt and lemon pepper.<br />
<span class="s5"><b>4.</b></span><span class="s3"> Cut the potatoes into chips and</span> <span class="s3">leave in a bowl of water while you heat the oil. Dry the chips and fry</span> <span class="s3">in batches until golden. Drain and </span>sprinkle with potato spice.<br />
<span class="s4"><b>5.</b></span> Dip the fish in the batter and deep-fry until golden brown and crispy. Drain on paper towel.<br />
<span class="s4"><b>6.</b></span> Serve with lemon wedges.</p>

</span><span class="s1"><b>1 tbsp</b> chilli flakes<br />
</span><span class="s1"><b>1 tsp</b> paprika<br />
</span><span class="s1"><b>For the chips<br />
</b></span><span class="s1"><b>6 </b>potatoes, cut into wedges<br />

</b></span><span class="s1"><b>1½ cups</b> flour<br />
</span><span class="s1"><b>1 tsp</b> baking powder<br />
</span><span class="s1"><b>1 tsp</b> salt<br />
</span><span class="s1"><b>1 tsp</b> black pepper<br />
</span><span class="s1"><b>1 tbsp</b> garlic powder<br />
</span><span class="s1"><b>½ tbsp</b> paprika<br />
</span><span class="s1"><b>1 cup</b> beer<br />
</span><span class="s1"><b>1 </b>egg<br />
</span><span class="s1"><b>4 </b>hake fillets, cut into strips</span></p>
<p class="p1"><span class="s1"><b>METHOD<br />
</b></span><span class="s1"><b>For the tartare sauce<br />
</b></span><span class="s1"><b>1. </b>Mix all the ingredients together and refrigerate.<br />
</span><span class="s1"><b>For the chilli salt<br />
</b></span><span class="s1"><b>1. </b>Mix all the ingredients together and set aside.<br />
</span><span class="s1"><b>For the chips<br />
</b></span><span class="s1"><b>1. </b>Heat enough oil to deep-fry in a pot over medium-high heat.<br />
</span><span class="s1"><b>2.</b> Add the wedges to the pot and deep-fry until golden brown and cooked through.<br />
</span><span class="s1"><b>3.</b> Remove with a slotted spoon and drain on a paper towel.<br />
</span><span class="s1"><b>4.</b> Season with the chilli salt.<br />
</span><span class="s1"><b>For the fish<br />
</b></span><span class="s1"><b>1. </b>Mix all of the dry ingredients together.<br />
</span><span class="s1"><b>2. </b>Whisk the beer and egg together and then add it to the dry ingredients.<br />
</span><span class="s1"><b>3. </b>Dip the hake fillets into the batter, allowing any excess to drip off.<br />
</span><span class="s1"><b>4.</b> Working in batches, deep-fry the fish for about 5 minutes, until golden brown and cooked. Remove with a slotted spoon and drain on paper towel. </span></p>

</b><b>800 g</b> hake fillets<br />
<b>¼ cup </b>flour<br />
<b>1 tsp</b> baking powder<br />
<b>½ cup</b> water<br />
<b>1</b> egg, whisked<br />
<b>¾ cup</b> cornflour<br />
<b>For the chips<br />
</b><b>4</b> potatoes, thinly sliced<br />
<b>For the pea dip<br />
</b><b>1 cup</b> peas<br />
<b>½ cup</b> sour cream<br />
<b>¼ cup</b> yoghurt<br />
<b>Handful</b> mint</p>
<p class="p1"><b>METHOD<br />
</b><b>For the fish<br />
</b><b>1. </b>Season the hake with salt and pepper.<br />
<b>2. </b>Mix the flour, baking powder, water and egg to make a batter.<br />
<b>3. </b>Coat each hake fillet in the cornflour and then roll in the batter until fully coated.<br />
<b>4. </b>Heat enough oil in a pan to shallow-fry the fish. Fry the hake until golden brown, flipping often, until cooked through.<br />
<b>For the chips<br />
</b><b>1. </b>Fry the potato slices in the still-hot oil, turning often, until golden brown and crispy.<br />
<b>For the pea dip<br />
</b><b style="font-size: 1em;">1. </b><span style="font-size: 1em;">Soak the peas in boiling water until hot.<br />
</span><b>2.</b> Add to a food processor with all the other ingredients, and blend until you get a chunky sauce. Season well.</p>
