<h3><span data-ccp-props="{}">Method </span></h3>
<ol>
<li><span data-contrast="auto"> Blitz spice ingredients until fine. </span></li>
<li><span data-contrast="auto"> Heat oil in a pot and fry 3 Tbsp of the spice paste for 1-2 minutes. </span></li>
<li><span data-contrast="auto"> Stir through whole spice and cook for another minute. </span></li>
<li><span data-contrast="auto"> Season beef well. Add beef and lemongrass to pot and brown well, about 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Add coconut cream, tamarind pulp or concentrate (if using) and water. Simmer uncovered for 30 minutes. </span></li>
<li><span data-contrast="auto"> Stir through lime leaves, desiccated coconut and sugar, then simmer covered for about 1½  hours or until meat is tender and sauce has reduced almost completely. 7. Serve hot sprinkled with extra coconut, with flatbread on the side. </span></li>

<h3><span data-ccp-props="{}">Method </span></h3>
<ol>
<li><span data-contrast="auto"> Combine dried chillies, cinnamon, cumin, turmeric, peppercorns and cloves in a pestle and mortar and crush to a fi ne spice mixture. Add a glug of oil and vinegar to create a wet paste. </span></li>
<li><span data-contrast="auto"> Season pork well and rub with the spice paste. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pot and fry onions for 6-8 minutes. </span></li>
<li><span data-contrast="auto"> Stir in garlic and ginger and cook for 2-3 minutes. </span></li>
<li><span data-contrast="auto"> Add pork and brown for 6-8 minutes. </span></li>
<li><span data-contrast="auto"> Pour in water and simmer covered for 30 minutes. </span></li>
<li><span data-contrast="auto"> Add vinegar and chilli, then simmer gently for about 20-25 minutes or until meat is tender and sauce has thickened. Adjust seasoning. </span></li>
<li><span data-contrast="auto"> Serve hot topped with coriander and crunchy poppadums on the side.</span></li>
