<h3>Method</h3>
<ol>
<li><span data-contrast="auto">Trim the chicken livers and pat dry with paper towel. Season.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Heat olive oil and butter on a high heat and flash fry the chicken livers for about 1-2 minutes per side till golden on the outside. Remove from pan and set aside.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> In the same pan, on a medium heat, sauté onion, pepper and bay leaves for about 3-4 minutes.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add garlic, chilli flakes and paprika and fry for another 2-3 minutes.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add peri-peri sauce, cream, lemon zest and a splash of lemon juice, to taste.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add brandy if using. Allow the sauce to simmer for about 4-5 minutes.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add back the chicken livers and simmer for another 5-10 minutes.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add parsley, season and serve with Portuguese rolls.</span><span data-ccp-props="{}"> </span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Crush biscuits into a coarse crumb.</span></li>
<li><span data-contrast="auto"> Combine crumb with half the butter and cinnamon, set aside.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Decant peaches, reserving the syrup.</span></li>
<li><span data-contrast="auto"> Add syrup to a pot with sugar, lemon juice and bourbon, if using. Bring to a simmer and cook until reduced and syrupy, about 5 minutes. Cool completely.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Halve peaches and add to a pan over medium heat.</span></li>
<li><span data-contrast="auto"> Add remaining butter and stir. Cook until caramelised and lightly charred, turning peaches occasionally to char on all sides, about 10 minutes.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add a final drizzle of peach syrup (about 3 Tbsp) to the pan and stir to coat. Remove from the heat.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> For cheesecake mousse, combine cream and vanilla, then whip to stiff peaks.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Whisk icing sugar and mascarpone until smooth. Fold through cream mixture.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add spoonfuls of biscuit crumb to 4-6 glasses, followed by dollops of cheesecake mixture and syrupy peaches.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Repeat to fill glasses and serve with an extra drizzle of syrup.</span><span data-ccp-props="{}"> </span></li>

</span><span data-contrast="auto">1 Tbsp butter </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1 small onion, finely chopped</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1L chicken stock </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1 clove of garlic, finely chopped</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1 can creamed corn </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1 can corn kernels, drained </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2 Tbsp corn flour (or mushroom soup powder, creamy cheese powder or even chicken a la king powder)</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">250ml cream (or milk, or a mixture of both)</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Salt, to taste</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Freshly ground pepper, to taste</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">½ cup water</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Chilli, coriander or thyme, chopped and to taste</span><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto">Heat butter in a large saucepan. Braise chicken and onions in the butter. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Add chicken stock, garlic, creamed corn, corn kernels and seasoning. Bring to the boil, stirring.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Combine corn flour, cream and water in a separate bowl. I add a tablespoon of chicken a la king powder, just to elevate the flavour. This is optional. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Add to saucepan, stir and simmer until thickened.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">At this stage you may add chopped chili, chopped coriander or a sprig of thyme.</span></li>

<p><b><span data-contrast="auto">Cook’s note:</span></b><span data-ccp-props="{}"> </span><span data-contrast="auto">If you don&#8217;t have chicken stock, use five pieces of chicken on the bone and remove the skin. Add one litre of water after lightly braising chicken and onions. Cook on medium heat and simmer for 20 minutes. Remove chicken, wait to cool, remove the bones and discard. Now follow the recipe and add the chopped cooked chicken. Yes, it&#8217;s that easy!</span><span data-ccp-props="{}"> </span></p>

Roti or naan, toasted<br />

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Reheat curry sofrito, adding a bit more oil. </span></li>
<li><span data-contrast="auto"> Add chickpeas, coconut milk and lime juice. Season. </span></li>
<li><span data-contrast="auto"> Simmer until sauce is thick and creamy, about 15-18 minutes. </span></li>
<li><span data-contrast="auto"> Combine topping ingredients in a small pan over medium-high heat. Fry for 1-2 minutes until fragrant and toasted.</span></li>
<li><span data-contrast="auto">Serve chickpea curry topped with sprinkle, red onion and coriander with roti or naan and limes on the side. </span></li>

</strong><span data-contrast="auto">We&#8217;re using the Spanish term sofrito&#8217; loosely, referring to an aromatic base to start dishes. Ingredients and names will differ between cuisines, for example Italian cuisine names it soffritto&#8217; and in French cuisine a version of this is a &#8216;mire poix&#8217;.</span><span data-ccp-props="{}"> </span></p>
