<p class="p1"><b>INGREDIENTS<br />
</b><b>100 g</b> white chocolate, chopped<br />
<b>2 tbsp</b> peanut butter<br />
<b>1 tbsp</b> coconut oil<br />
<b>¼ cup</b> xylitol or honey<br />
<b>½ cup</b> butter or coconut oil<br />
<b>1 cup</b> cake or wholewheat flour<br />
<b>1 cup</b> puffed rice<br />
<b>½ cup</b> dried cranberries<br />
<b>½ cup</b> salted peanuts</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Line a baking tray.<br />
<b>2.</b> Heat the chocolate, peanut butter and coconut oil in the microwave in 30-second bursts until melted and smooth.<br />
<b>3.</b> Spread out on the baking tray and cool until hardened. Break up into pieces.<br />
<b>4.</b> Preheat oven to 180ºC.<br />
<b>5. </b>Mix the xylitol or honey, Add the flour, mixing until fine crumbs form. Add puffed rice.<br />
<b>6.</b> Spread out the mixture on the baking tray. Bake for 15 minutes, until golden.<br />
<b>7. </b>To assemble, toss together the puffed-rice clusters, chocolate pieces, cranberries and peanuts. Store in an airtight container.</p>

</b><b>½ cup</b> coconut oil<br />
<b>¼ cup</b> honey<br />
<b>1 cup </b>desiccated coconut or coconut flakes<br />
<b>¾ cup</b> raw cashews<br />
<b>½ cup </b>raisins</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Preheat oven to 180ºC and grease a baking tray.<br />
<b>2. </b>Melt coconut oil and honey in the microwave.<br />
<b>3. </b>Mix the coconut and cashews, then stir in the honey mixture.<br />
<b>4.</b> Scatter on to the baking tray and bake for 10–15 minutes.<br />
<b>5.</b> Cool, then mix in raisins.</p>

<b>½ cup</b> honey<br />
<b style="font-size: 1em;">cup</b><span style="font-size: 1em;"> brown sugar<br />
</span><b>1 tbsp</b> vanilla essence<br />
<b>½ tsp</b> salt<br />
<b>5 cups</b> rolled oats<br />
<b>2 cups</b> puffed brown rice<br />
<b>½ cup</b> dried cranberries<br />
<b>½ cup</b> chopped white chocolate or chopped nuts</p>
<p class="p1"><span class="s2"><b>METHOD<br />
</b></span><b>1.</b> Preheat oven to 180°C and line a tray with baking paper.<br />
<b>2.</b> Place the oil, honey, sugar, <span class="s2">vanilla essence and salt in a pot over low heat. Whisk until </span>the sugar has dissolved and the <span class="s2">oil is incorporated. Remove from</span> the heat and pour into a bowl.<br />
<span class="s2"><b>3.</b> Add the rolled oats, puffed rice, cranberries and chocolate</span> or nuts to the sugar mixture.<br />
<span class="s2"><b>4.</b> Pour the mixture on to the </span>baking tray. Spread out into an even layer, pressing it down.<br />
<b>5.</b> Bake for 15 minutes. If you are using 2 baking trays, swap <span class="s2">them around and bake for a </span>further 15 minutes.<br />
<span class="s2"><b>6.</b> </span>Remove from the oven and <span class="s2">allow to cool for 1 hour before using your hands to break it </span>into clusters.<br />
<span class="s2"><b>7.</b> </span>Serve the granola with fruit and yoghurt.</p>
