<li><span data-contrast="auto"> Remove from the heat. Add the lemon juice, zest and mint leaves. Liquidise until smooth.</span></li>

<h3><b><span data-contrast="auto">Method</span></b></h3>
<p><em>For the clementine curd </em></p>
<ol>
<li><span data-contrast="auto"> Preheat oven to 180°C.</span></li>
<li><span data-contrast="auto"> Place the lemon and clementine juices in a bowl along with the sugar and eggs.</span></li>
<li><span data-contrast="auto"> Place the bowl over a pot of simmering water and cook, stirring continuously, for 20–25 minutes, until the mixture thickens.</span></li>
<li><span data-contrast="auto"> When the mixture is thick enough to coat the back of a spoon, remove from the heat and whisk the butter into the mixture.</span></li>
<li><span data-contrast="auto"> Place in the fridge to cool completely.</span></li>
</ol>
<p><em>For the pastry </em></p>
<ol>
<li><span data-contrast="auto"> Cream the butter and icing sugar together in a blender. Add the flour and mix until it resembles coarse breadcrumbs.</span></li>
<li><span data-contrast="auto"> Add the egg gradually and blend until a ball forms. Remove from the machine and shape quickly into a round disc.</span></li>
<li><span data-contrast="auto"> Wrap in cling film and refrigerate for ±30 minutes. Grease a 12-hole muffin tin.</span></li>
<li><span data-contrast="auto"> Roll out the pastry on a floured surface and use a round cookie cutter to cut out 12 rounds, each with a diameter of 10cm.</span></li>
<li><span data-contrast="auto"> Place these bottom rounds in the muffin tray and blind bake for 10 minutes.</span></li>
<li><span data-contrast="auto"> Cut out another 12 circles for the lids of the mince pies, each with a diameter of 8cm.</span></li>
<li><span data-contrast="auto"> Cut star shapes out of half the lids and stick these on to the remaining lids.</span></li>
</ol>
<p><em>For the filling </em></p>
<ol>
<li><span data-contrast="auto"> Combine all the filling ingredients.</span></li>
<li><span data-contrast="auto"> Remove the pastry shells from the oven and set aside.</span></li>
<li><span data-contrast="auto"> Cool the shells to room temperature and then carefully place a teaspoon of the curd into each shell, topping with a teaspoon of the filling.</span></li>
<li><span data-contrast="auto"> Brush the sides of the pastry shells with egg wash and stick the lids on to the pastry shells, making sure the edges are secured. Refrigerate for about 15 minutes.</span></li>
<li><span data-contrast="auto"> Brush some egg wash on the top of each mince pie and bake in the oven for 15–20 minutes, until crispy and golden. Dust with icing sugar before serving.</span></li>

<ol>
<li><span data-contrast="auto"> Preheat oven to 150°C.</span></li>
<li><span data-contrast="auto"> Season the ribs on both sides and lay them down in a roasting tray.</span></li>
<li><span data-contrast="auto"> Combine all the remaining ingredients in a food processor. Blend.</span></li>
<li><span data-contrast="auto"> Pour the glaze over the ribs, coating evenly.</span></li>
<li><span data-contrast="auto"> Cover lightly with foil and roast for 2½ hours.</span></li>
<li><span data-contrast="auto"> Remove the foil, baste the ribs and increase the oven temperature to 200°C. Return to the oven for another 30 minutes, checking regularly, until nicely browned.</span></li>
<li><span data-contrast="auto"> Allow to rest for 15 minutes before serving with the remaining glaze from the pan.</span></li>

<p><span data-contrast="auto">1 cup (250 ml) cream </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">150 g butter </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">¾ cup (150 g) sugar </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">¾ cup (180 ml) hot water   </span><span data-ccp-props="{}"> </span></p>
<h3><b><span data-contrast="auto">Method </span></b><span data-ccp-props="{}"> </span></h3>
<p><em>For the custard  </em></p>
<ol>
<li><span data-contrast="auto">Place the cream and vanilla in a pot over medium heat.</span></li>
<li><span data-contrast="auto">Add the sugar and egg yolks to a bowl and whisk for 3 minutes, until pale and thick.</span></li>
<li><span data-contrast="auto">Just before the cream starts simmering, remove from the heat. </span></li>
<li><span data-contrast="auto">While whisking the egg-yolk mixture, add around half a cup of the hot cream and stir vigorously to mix through. Continue to add the cream bit by bit, to not overheat and curdle the eggs.</span></li>
<li><span data-contrast="auto">Move the custard back into the pot and place over a low heat.</span></li>
<li><span data-contrast="auto">Stir continuously for 10–15 minutes until the custard has thickened and coats the back of a spoon.</span></li>
<li><span data-contrast="auto">Strain the custard into a jug through a fine mesh sieve to remove any bits. Place a layer of cling film on the surface of the custard and refrigerate until needed. Adding the cling film to the surface of the custard prevents a skin from forming.</span></li>
</ol>
<p><em>For the malva  </em></p>
<ol>
<li><span data-contrast="auto">Preheat the oven to 180°C.</span></li>
<li><span data-contrast="auto">Add the sugar and eggs to the bowl of a stand mixer and beat well until thick, about 2 minutes. Mix through the jam.</span></li>
<li><span data-contrast="auto">In a separate bowl, sift together the flour, bicarb and salt.</span></li>
<li><span data-contrast="auto">Add the butter, vinegar and milk to a bowl and microwave until the butter is just melted.</span></li>
<li><span data-contrast="auto">Add the sifted dry ingredients and the milk mixture alternately to the egg mixture. Beat well until smooth and combined. Stir through the chocolate and orange zest until evenly dispersed. Cover and bake for 45–55 minutes.</span></li>
</ol>
<p><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">For the sauce </span><span data-ccp-props="{}"> </span></p>
<ol>
<li><span data-contrast="auto">Just before the pudding is ready, place the ingredients for the sauce in a pot over medium heat and stir until the sugar has dissolved and butter has melted.</span></li>
<li><span data-contrast="auto">Remove the pudding from the oven and place on a cooling rack. Use a skewer or knife to pierce holes all over the surface, through to the bottom of the dish.</span></li>
<li><span data-contrast="auto">Slowly pour the warm sauce over the pudding, stopping to let it absorb the liquid before adding more.</span></li>
<li><span data-contrast="auto">Serve the malva pudding with the vanilla custard.</span></li>
