<li><span data-contrast="auto"> Heat some oil in a pot over medium heat. Add onion, garlic and carrot, and fry for 8–10 minutes until onions are soft. </span></li>
<li><span data-contrast="auto"> Add the paprika and cook until fragrant. </span></li>
<li><span data-contrast="auto">Add the tomatoes and cook for 5 minutes, then stir in the tomato paste, reserved tomato juice, Worcestershire sauce and 2 cups water. </span></li>
<li><span data-contrast="auto"> Reduce heat and simmer for 8–10 minutes, then season.</span></li>
<li><span data-contrast="auto">Remove from the heat and cool slightly. Transfer to a blender and blend until smooth.</span></li>
</ol>
<p><i><span data-contrast="auto">For the cheese toasties </span></i><span data-ccp-props="{}"> </span></p>
<ol>
<li><span data-contrast="auto"> Preheat oven to 220°C. Line a baking tray with baking paper.</span></li>
<li><span data-contrast="auto"> Arrange 4 slices of bread on the tray and top with cheese. Season with salt and pepper. Top each one with a slice of bread to make 4 sandwiches.</span></li>
<li><span data-contrast="auto"> Bake for about 10 minutes, turning halfway, until the bread is golden and toasted, and the cheese has melted.</span></li>
<li><span data-contrast="auto"> Cut toasties in half and ladle soup into bowls. Top with a spoonful of sour cream.</span></li>

<li><span data-contrast="auto"> Heat the oil in a pot over medium heat. Brown the bacon, then add the onion and celery and sauté for 5 minutes.</span></li>
<li><span data-contrast="auto"> Add the mielie kernels, potatoes and stock. Simmer for 15–20 minutes, until the potatoes are soft.</span></li>
<li><span data-contrast="auto"> In the meantime, melt butter in a pan over high heat. Add the mussels and pop the lid on. Cook, checking regularly, until all the mussels have opened. Remove the meat from half the mussels, discarding the shells.</span></li>
<li><span data-contrast="auto"> Transfer the soup to a food processor and blend until chunky.</span></li>
<li><span data-contrast="auto"> Stir through the picked mussels and the cream. </span></li>
<li><span data-contrast="auto"> Ladle chowder into bowls and top with the remaining mussels still in their shells.</span></li>

<li><span data-contrast="auto">3. To make the curry, heat oil in a pot over medium. Fry garlic and ginger until golden. Add onion and fry.</span></li>
<li><span data-contrast="auto">Stir in tomato paste and tomatoes, and cook for 3 minutes.</span></li>

<li><span data-contrast="auto"> Heat oil in a pan over medium heat. Fry the onion, carrot and celery until the onion is soft, about 5 minutes.</span></li>

<li><span data-contrast="auto"> Crumble the mince into the pan. Fry for 3 minutes until browned, continuing to break up the mince using a wooden spoon.</span></li>

<li><span data-contrast="auto"> Add stock, wine (or more stock) and bay leaves. Scrape the bottom of the pan to release any stuck bits of flavour.</span></li>

<li><span data-contrast="auto"> Rub the brisket all over with a mix of garlic powder, chilli powder, salt and pepper.</span></li>
<li><span data-contrast="auto"> Whisk together all the sauce ingredients (except the cornflour).  </span></li>
<li><span data-contrast="auto">Place brisket in an ovenproof casserole dish, pour over beef stock and honey-BBQ sauce.</span></li>
<li><span data-contrast="auto">Slow-roast for 5–6 hours, until the liquid has reduced by half.</span></li>
<li><span data-contrast="auto">Remove the brisket from the dish and set aside, reserving the sauce/cooking liquid.</span></li>
<li><span data-contrast="auto">Place the Kreemymeel/Maltabella, water and butter in a pot over medium heat. Cover and cook for 15 minutes. Stir with a wooden spoon and set aside. </span></li>
<li><span data-contrast="auto"> Pour the reserved sauce into a pot, bring to a simmer, then whisk in the cornflour paste. Cook, whisking continuously, until the sauce has thickened. Season to taste.</span></li>
<li><span data-contrast="auto">Shred the brisket and add it to the sauce. </span></li>
<li><span data-contrast="auto"> Serve the honey-BBQ brisket with creamy pap.</span></li>

<li><span data-contrast="auto"> Cream together the coconut sugar or xylitol and coconut oil. Then add the eggs, mixing until well incorporated.</span></li>
<li><span data-contrast="auto"> Add milk, water and vanilla, and mix until incorporated.</span></li>
<li><span data-contrast="auto"> In a separate bowl, whisk together coconut flour, almond flour and baking powder. Add the dry ingredients to the wet and combine thoroughly.</span></li>
<li><span data-contrast="auto"> Pour the batter into the cake tins and bake for 30 minutes, or until golden brown. Switch off the oven and allow to cool in the oven for 15 minutes before removing.</span></li>

<li><span data-contrast="auto"> Pulse all the ingredients together in a food processor until well combined.</span></li>
<li><span data-contrast="auto"> Shape the mixture into 2 cm-thick patties. Rest on a baking tray</span></li>

<p><em>For the cucumber-garlic yoghurt </em></p>

<li><span data-contrast="auto"> Combine all the ingredients and set aside.</span></li>
<li><span data-contrast="auto"> Preheat a pan with olive or coconut oil. Once hot, add your patties and gently fry for 10–12 minutes until heated through.</span></li>

<li><span data-contrast="auto"> Toss all the ingredients together, cover with cling wrap and marinate for at least 1 hour.</span></li>

<li><span data-contrast="auto"> Heat oil in a pot over medium. Fry garlic and ginger until golden. Add onions and fry.</span></li>
<li><span data-contrast="auto"> Stir in the tomato paste and tomatoes and cook for 3 minutes. Next, add the curried yoghurt. Simmer for 5 minutes.</span></li>
<li><span data-contrast="auto"> Add the spices, chicken and 1½ cups water. Reduce the heat and simmer for 20–25 min.</span></li>

</span><span data-contrast="auto">2 store-bought chocolate muffins, crumbled</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">¼ cup (60 ml) melted butter </span><br />
<span data-contrast="auto">Strawberries</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Chocolate sauce, for serving   </span><span data-ccp-props="{}"> </span></p>
<h3><b><span data-contrast="auto">Method </span></b><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Prepare one packet of jelly to packet instructions and set completely. Cut the jelly into squares and chill. </span></li>
<li><span data-contrast="auto"> Add ¾ cup (180 ml) boiling water to the remaining two packets of jelly powder and whisk until all granules are dissolved. Add another 3⁄4 cup (180 ml) ice-cold water. </span></li>
<li><span data-contrast="auto"> Combine the jelly into yoghurt. Pour into a 20&#215;8 cm loaf tin lined with cling wrap. </span></li>
<li><span data-contrast="auto"> Chill for 20–30 minutes until partially set, then add half the blocks of plain jelly. (These tend to fall to the bottom of the tin, so doing this in two steps ensures jewels throughout.)</span></li>
<li><span data-contrast="auto"> Chill for another 30 minutes, add remaining jelly blocks and chill until completely set.</span></li>
<li><span data-contrast="auto"> Combine the muffin crumbs and butter to create a crumble.</span></li>
<li><span data-contrast="auto"> Unmould the jelly onto a serving plate. Slice and serve scattered with the crumble, strawberries and chocolate sauce.  </span></li>

<span class="s3"><strong>125</strong> ml</span> plain yoghurt<br />
Chilli, chopped, to serve<br />
<span class="s2">Spring onions, chopped, to serve</span></p>
<p class="p3"><span class="s2"><b>METHOD<br />
</b></span><strong><span class="s4">1.</span></strong><span class="s2"> Blitz the unchopped onion, the </span>garlic-ginger-dhania paste, tomato paste, curry powder and sugar to form a paste.<br />
<strong><span class="s3">2.</span></strong> Heat oil in a pot and fry the chicken pieces until browned. Remove from the pot.<br />
<strong><span class="s3">3.</span></strong> Add the chopped onion and <span class="s2">yellow pepper to the pot and </span>fry until soft, about 5 minutes.<br />
<span class="s3"><strong>4</strong>.</span> Return the chicken to the pot. Add the curry paste, chickpeas, coconut milk, baby corn and the stock, ensuring the ingredients <span class="s2">are covered in liquid. Simmer for</span> 45 minutes to 1 hour.<br />
<strong><span class="s3">5.</span></strong> Season to taste and add most of the coriander.<br />
<span class="s4"><strong>6.</strong> </span><span class="s2">Serve the curry dotted with</span> yoghurt, and scattered with the <span class="s2">remaining chopped coriander, </span>and the chilli and spring onions.</p>

</b><b>1. </b>Heat oil in a pot over medium. Fry garlic and ginger until golden. Add onions and fry.<br />
<b>2. </b>Stir in the tomato paste and tomatoes, and cook for 3 minutes. Then, add the curried yoghurt. Simmer for 5 minutes.<br />
<b>3.</b> Add the spices, chicken and 1½ cups water. Reduce the heat and simmer for 20–25 min.</p>

</b><b>For the curry<br />
</b><b>3 tbsp</b> vegetable oil<br />
<b>12</b> chicken pieces<br />
<b>6</b> dried rose petals<br />
<b>2 tbsp</b> chopped ginger<br />
<b>4</b> garlic cloves, crushed<br />
<b>2 tbsp </b>garam masala<br />
<b>½ tsp</b> paprika<br />
<b>2 tsp</b> ground cardamom<br />
<b>1 tsp</b> salt<br />
<b>1 tsp</b> turmeric<br />
<b>1 cup </b>almonds<br />
<b>3 tbsp</b> butter<br />
<b>2 </b>onions, finely sliced<br />
<b>4 tbsp </b>tomato paste<br />
<b>1½ cups </b>Greek yoghurt<br />
<b>½ cup </b>cream<br />
<b>To serve<br />
</b><b>¼ cup </b>flaked almonds, toasted<br />
<b>2 tsp</b> dried rose petals<br />
<b>6</b> rotis, warmed<br />
Wedges of <b>2</b> lemons</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Heat 2 tablespoons of the vegetable oil in a pot over medium heat. Brown the chicken in batches, until almost cooked through. Remove from the pot and set aside.<br />
<b>2. </b>Add the 6 rose petals, ginger, garlic, garam masala, paprika, cardamom, salt, turmeric and almonds to a food processor. Blend until smooth.<br />
<b>3.</b> Add the remaining vegetable oil and the butter to the pot. Add the onions and cook until caramelised, about 5 minutes.<br />
<b>4.</b> Add the blended spice mix and fry for 2 minutes, until fragrant.<br />
<strong>5.</strong> Reduce the heat and mix in the tomato paste and yoghurt. Simmer for 3 minutes, then add the chicken.<br />
<b>6. </b>Lower the heat and cook for 10 minutes, until the chicken is done. Remove from the heat, stir in the cream and season with salt and pepper.<br />
<b>7. </b>Top your chicken korma with flaked almonds and rose petals and serve with warm rotis and lemon wedges.</p>

<b>½ tbsp</b> ginger<br />
<b>½ tbsp </b>garlic powder<br />
<b>1 tsp</b> yellow mustard seeds<br />
<b>½ tsp</b> black pepper<br />
<b>½ tsp</b> allspice<br />
<b>¼ tsp</b> cinnamon<br />
<b>For the curry<br />
</b><b>4</b> chicken breasts<br />
<b>2 tbsp</b> vegetable oil<br />
<b>2</b> onions, chopped<br />
<b>1 tbsp</b> crushed garlic<br />
<b>2 tsp</b> grated fresh ginger<br />
<b>2</b> red chillies, chopped<br />
<b>2 cups</b> chicken stock<br />
<b>400 ml</b> <strong>tin</strong> coconut milk<br />
<b>1 tbsp</b> brown sugar<br />
Juice of <strong>1</strong> lemon</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Toast spice mix ingredients in a dry pan until they are almost starting to smoke. Remove from pan and cool.<br />
<b>2. </b>Place the chicken in a bowl and coat with ½ the toasted spice mix, 1 tsp salt and the oil. Marinate for 20 minutes.<br />
<b>3. </b>Fry chicken breasts for 3 minutes on each side to seal in flavour. Remove from the pan.<br />
<b>4.</b> Sauté the onion, garlic, ginger, chillies and the rest of the toasted spice mix in the pan, until the onion is soft.<br />
<b>5. </b>Add the stock, coconut milk and sugar. Give it a stir, then add the chicken breasts.<br />
<b>6. </b>Simmer for 12–15 minutes, until the sauce has reduced by ⅔. Season with 2 tsp salt, some pepper and the lemon juice.<br />
<b>7. </b>Serve with rice and coriander.</p>
