<p><strong>SERVES</strong> 4 // <strong>COOKING TIME</strong> 35 mins</p>
<p><strong>INGREDIENTS </strong><br />
<strong>2 tbsp</strong> olive oil<br />
<strong>1</strong> onion, peeled and finely chopped<br />
<strong>500g</strong> beef mince<br />
<strong>410g tin</strong> chopped tomatoes<br />
<strong>3</strong> cloves garlic, peeled and crushed<br />
<strong>½ tsp</strong> dried origanum<br />
<strong>½ tsp</strong> dried parsley<br />
<strong>½ tsp</strong> dried thyme<br />
Salt and pepper<br />
Sugar<br />
<strong>4</strong> gem squashes, cut in half<br />
<strong>50g</strong> cheddar, grated</p>
<p><strong>METHOD</strong><br />
<strong>1.</strong> Preheat oven to 200°C.<br />
<strong>2.</strong> Heat the oil in a large pot over medium heat. Add the onion and fry for 3 minutes, until soft. Then turn up the heat, add the mince and fry for 5 minutes, until brown.<br />
<strong>3.</strong> Add the tomatoes, garlic and herbs. Turn down the heat and let simmer for 25 minutes. Then season and add a pinch of sugar.<br />
<strong>4.</strong> Arrange the squash halves in the bottom of a large pot and fill with water to reach halfway up their sides. Bring to a simmer and steam for 15 minutes, until cooked through, then spoon out the seeds.<br />
<strong>5.</strong> Fill the squash with the mince and sprinkle some cheese on top of each one. Bake for 10 minutes, until the cheese has melted, then serve.</p>

<strong>200g</strong> blue cheese, crumbled<br />
<strong>50g</strong> ground almonds<br />
Salt and pepper<br />
<strong>12</strong> Peppadews<br />
<strong>2 tbsp</strong> olive oil</p>
<p><strong>Method</strong><br />
<strong>1.</strong> Preheat oven to 180°C.<br />
<strong>2.</strong> In a bowl, mix together the cream cheese, Bloukrans cheese and almonds, and season. Spoon the mixture into the Peppadews.<br />
<strong>3.</strong> Place the stuffed Peppadews on a baking tray, drizzle with olive oil, season and roast for 10 minutes. Serve warm.</p>
