</b></span><b>1 cup</b> quinoa, cooked as per packet instructions<br />
<b>100g</b> cherry tomatoes, halved<br />
<b>150g</b> fior di latte mozzarella, torn<br />
<b>10–15</b> basil leaves<br />
<b>2 </b>spring onions, sliced<br />
<b>3 tbsp</b> olive oil<br />
Salt and black pepper</p>

</b></span><b>1.</b> Mix together the quinoa, tomatoes, mozzarella, basil and spring onions.<br />
<b>2. </b>Add the oil and toss to coat. Season and serve.</p>
