<h3>Ingredients</h3>
<p><span data-contrast="auto">2 tubs (230g each) cream cheese, at room temperature </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">½ tsp (3ml) ground coriander </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">3/4 cup biltong powder </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">800g store-bought bread dough Flour, for dusting </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">100g sliced biltong </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">500g mozzarella, grated </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">6-8 preserved green figs in syrup, chopped </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Thyme leaves and basil, for serving </span><span data-ccp-props="{}"> </span></p>
<h3><span data-ccp-props="{}">Method </span></h3>
<ol>
<li><span data-contrast="auto"> Preheat oven and two baking trays to 180°C. </span></li>
<li><span data-contrast="auto"> Whisk cream cheese until smooth, adding a glug of milk if mixture isn&#8217;t spreadable. </span></li>
<li><span data-contrast="auto"> Combine cream cheese, coriander and biltong powder. Season and set aside. </span></li>
<li><span data-contrast="auto"> Portion the dough into 6-8 pieces. Roll out pieces of dough into circles of about 3cm-thick on a floured surface. </span></li>
<li><span data-contrast="auto"> Spread each pizza dough base with cream cheese, dividing evenly and leaving a 2cm border clean. </span></li>
<li><span data-contrast="auto"> Top one half of base with biltong, cheese, a sprinkle of thyme and a few pieces of preserved fig. </span></li>
<li><span data-contrast="auto"> Fold over to create a half moon, then pinch the inside of borders to stick together. </span></li>
<li><span data-contrast="auto"> Bake on preheated baking trays for 18-23 minutes, flipping halfway through, until brown and cooked through. </span></li>
<li><span data-contrast="auto"> Serve hot out of the oven scattered with thyme, basil and drizzle with preserved fig syrup, if you like. </span></li>

<p><strong>Cook&#8217;s note</strong><br />
Biltong pairs well with chilli and feta so why not add some crumbled feta and chilli flakes into your filling for added flavour.</p>

<h3><span data-contrast="auto">Method</span><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Blitz together the feta, yoghurt, coriander, lemon zest and chilli. Season with black pepper and set aside. </span></li>
<li><span data-contrast="auto"> Pat the calamari dry using a paper towel or a clean tea towel. </span></li>
<li><span data-contrast="auto"> In a bowl, combine the cake flour, garlic powder (if using) and season. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pot or pot for shallow frying. 5. Toss the calamari into seasoned flour, dust off excess and fry in batches for about 2-3 minutes each. Drain on paper towel. </span></li>
<li><span data-contrast="auto"> Blanch the sugar snap peas in a pot of salted boiling water and refresh in ice water. </span></li>
<li><span data-contrast="auto"> Toss blanched greens in a bowl with half the olive oil, chilli, lemon zest and juice. Set aside. </span></li>
<li><span data-contrast="auto"> Heat remaining oil and paprika in a clean pan for 30 seconds to 1 minute or until fragrant. 9. Add a generous dollop of the whipped feta onto each plate. Top with the blanched greens, crispy calamari and drizzled with paprika oil. Serve with the toasted pita bread.</span></li>

<ol>
<li><span data-contrast="auto"> Preheat oven to 180 ̊C. </span></li>
<li><span data-contrast="auto"> Combine the buttermilk, garlic, chilli flakes and herbs. </span></li>
<li><span data-contrast="auto"> Season the steak well and add to the marinade, tossing to coat evenly. Set aside to marinate for at least 30 minutes.</span></li>
<li><span data-contrast="auto"> Toss baby potatoes with oil and season well. Place onto a baking tray and bake for about 20-25 minutes. </span></li>

<p><em>FOR PIPING  </em></p>
<p><span data-contrast="auto">1 large star nozzle </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1 large piping bag</span><span data-ccp-props="{}"> </span></p>
<h3><span data-contrast="auto">Method</span><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Add water, butter, vanilla and salt to a pot over high heat, stir to melt and bring to a rapid boil. </span></li>
<li><span data-contrast="auto"> Remove the pot from the heat, add the flour and mix with a wooden spoon until a smooth paste forms.</span></li>
<li><span data-contrast="auto"> Transfer paste to another bowl and cool for 10 min until you can press your finger into the mixture for more than 5 seconds. (Too hot and the mixture will cook the eggs). </span></li>
<li><span data-contrast="auto"> Add the eggs one at a time, beating until completely combined before adding the next. </span></li>
<li><span data-contrast="auto"> Heat a pot of oil for deep-frying.</span></li>
<li><span data-contrast="auto"> Combine cinnamon sugar ingredients in a deep bowl. </span></li>
<li><span data-contrast="auto"> Snip off the end of your piping back and fit with your piping nozzle. </span></li>
<li><span data-contrast="auto"> Place bag into a long glass, folding the opening over rim of the glass. </span></li>
<li><span data-contrast="auto"> Spoon half of the mixture into the piping bag, close and twist to secure. Dip blades of a pair of scissors in some oil. (This prevents the batter from sticking). </span></li>
<li><span data-contrast="auto"> Pipe portions of the batter into the hot oil, using scissors to snip between each churro. 11. Deep-fry in batches for 2-3 minutes until golden and cooked through. </span></li>
<li><span data-contrast="auto"> Remove using a slotted spoon and immediately toss through cinnamon sugar to coat, then drain on paper towel. Repeat with remaining mixture to make 20-30 churros. </span></li>
<li><span data-contrast="auto"> Melt chocolate and cream over a double boiler until well combined. Stir through the zest and chilli. </span></li>
<li><span data-contrast="auto"> Arrange the churros on a serving plate with citrus, chilli chocolate sauce on the side.</span></li>

<li><span data-contrast="auto"> Combine chicken, oil, spices and season well. Toss to coat. </span></li>
<li><span data-contrast="auto"> Heat another glug of oil in a pan and fry the chicken breasts for about 4-6 minutes per side until golden and cooked through. Set aside and keep warm for serving. </span></li>
<li><span data-contrast="auto"> Heat some oil in a pot and fry onions and garlic for 3-5 minutes or until they are golden. </span></li>
<li><span data-contrast="auto"> Add butter and once melted, remove from heat and whisk in the flour. </span></li>
<li><span data-contrast="auto"> Place the pot back onto a low heat then add milk and cream, while stirring until thickened. This should take about 6-8 minutes. </span></li>
<li><span data-contrast="auto"> Stir through mustard and sun-dried tomatoes and simmer gently for about 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Season well and fold through baby spinach, simmer for 1 minutes and remove from the heat. </span></li>
<li><span data-contrast="auto"> In a bowl, toss the cooked pasta with the sauce and coat evenly. </span></li>
<li><span data-contrast="auto"> Divide the pasta and sauce between two serving bowls. </span></li>
<li><span data-contrast="auto"> Top with cooked chicken, drizzle with lime juice and sprinkle with zest. </span></li>
<li><span data-contrast="auto"> Finish off with Parmesan just before serving.</span></li>

<p class="p1"><b>INGREDIENTS<br />
</b><b>½</b> red pepper<br />
<b>½</b> green pepper<br />
<b>½</b> yellow pepper<br />
<b>½</b> onion, peeled<br />
<b>2 tbsp </b>olive oil<br />
<b>⅓ cup </b>tomato passata<br />
<b>1 kg</b> bread dough<br />
<b>½ cup</b> sliced biltong<br />
<b>⅓<span class="Apple-converted-space">  </span>cup</b> thinly sliced basil<br />
<b>¾ cup</b> grated mozzarella<br />
Salt and black pepper</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Preheat oven to 200°C.<br />
<b>2</b>. Place peppers and onion on a baking tray and toss with 1 tbsp oil. Roast for 30–35 minutes, until soft and slightly charred.<br />
<b>3.</b> Turn the oven down to 180°C.<br />
<b>4.</b> Place the hot peppers in a bowl and cover with cling film. Leave to sweat for 20 minutes, then peel off the skins.<br />
<b>5.</b> Place the peppers and onion in a food processor and blitz to make a coarse mixture. Mix in the passata.<br />
<b>6.</b> Divide the bread dough into 10 balls. Roll out each one into a 10 cm round.<br />
<b>7.</b> Spread 2 tbsp pepper passata on the centre of each round. Top with biltong, basil and a sprinkle of mozzarella. Season.<br />
8. Fold each dough round in half and seal the edges by pressing with a fork to make the calzones.<br />
<b>8.</b> Brush each calzone with 1 tbsp olive oil, arrange on a baking tray and bake for 30 minutes, until golden brown.</p>

<b>1½ cups</b> white bread flour<br />
<b>½ tsp</b> salt<br />
<b>For the filling<br />
</b><b>2 cups</b> grated mozzarella<br />
<b>1 tsp</b> chopped parsley<br />
<b>1</b> red pepper, seeded and chopped<br />
<b>1 tbsp</b> olive oil<br />
<b>1</b> red onion, peeled and sliced into petals<br />
<b>½ tsp </b>chilli flakes<br />
<span class="s3"><b>4</b> frozen pork bangers, defrosted</span> and casings removed<br />
Salt and pepper</p>
<p class="p4"><span class="s2"><b>METHOD<br />
</b></span><b>For the calzone<br />
</b><b>1.</b> Mix the yeast, sugar, oil and <span class="s4">water in a bowl. Set aside in a </span><span class="s3">warm place for 10 minutes, until </span>bubbles start to form.<br />
<span class="s4"><b>2.</b> Mix flour and salt in a bowl and make a well in the centre. Pour in the yeast mixture and stir until it all comes together.</span> Cover and set aside in a warm place for 30 minutes, until the dough has doubled in size.<br />
<b>For the filling<br />
</b><b>1.</b> Preheat oven to 180°C.<br />
<b>2.</b> Mix cheese and parsley, then refrigerate until ready to use.<br />
<b>3.</b> Roast the red pepper in the oven for 15 minutes.<br />
<b>4.</b> Heat the oil then fry the onion <span class="s3">and chilli for 5 minutes, until the</span> onion is soft. Add the sausage meat, breaking it up into large chunks with a wooden spoon.<br />
<b>5.</b> Add the red pepper, season well and set aside to cool.<br />
<b>To assemble<br />
</b><b>1.</b> Line 2 baking trays.<br />
<b>2.</b> Place the dough on a lightly floured surface and knock back gently. Divide into 2 pieces and roll each out into a rough circle.<br />
<b>3.</b> Spoon ½ cheese mixture on to the bottom half of the dough, leaving a 1 cm border, then top with ½ sausage mixture.<br />
<b>4.</b> <span class="s5">Fold over the top part to enclose the filling, forming a half circle. Seal well, working outward, pushing out any air</span> pockets that may have formed. Crimp the edges by folding the border over itself. Repeat with the remaining dough and filling.<br />
<b>5.</b> Lightly brush each calzone <span class="s3">with oil. Bake for 15–20 minutes.</span></p>
