<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 180°C. Line a 35x25cm sheet tray with baking paper.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Combine dry ingredients in a large mixing bowl. Whisk together all the wet ingredients and pour into the dry ingredients while mixing, creating a smooth batter.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Pour batter into prepared tray.Dot jam over and swirl lightly using a spoon, to spread out. Scatter with strawberry slices.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Bake for 28-33 minutes, or until a skewer inserted into the centre comes out clean. Remove and cool completely in the tray.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Meanwhile, melt chocolate and cream over a double boiler until smooth — don’t overheat. (Alternatively, you can use the microwave, working in 30-60 second increments to avoid overheating and seizing.)</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Remove mixture from the heat and add butter, stirring to melt.</span></li>
<li><span data-contrast="auto"> Add a drop of pink colouring, if using. Leave to cool at room temperature until semi-firm, or chill for 30 minutes to speed up the process.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Whisk ganache with an electric whisk to create a fluffy spread.</span></li>
<li><span data-contrast="auto"> Spread ganache onto sheet cake. Slice into squares.</span></li>
<li><span data-contrast="auto"> Just before serving, decorate with edible flowers and sprinkle over crushed freeze-dried strawberries.</span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> Stir through half the chopped almonds.</span></li>
<li><span data-contrast="auto"> Make a well in the centre, add whisked egg and buttermilk and mix with a fork, incorporating dry ingredients a little at a time, until a dough forms.</span></li>

<li><span data-contrast="auto"> Combine coriander, cumin and paprika and evenly coat pork with the spice mixture. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pan and fry fillet for about 5-6 minutes per side or until cooked through and all sides are golden. Set aside to rest for about 5-6 minutes before slicing. </span></li>
<li><span data-contrast="auto"> Deep-fry ravioli in hot oil for 3-4 minutes or until golden. Drain on kitchen paper and season. </span></li>
<li><span data-contrast="auto"> Combine dressing ingredients in a bowl and season well. </span></li>
<li><span data-contrast="auto"> Arrange lettuce, celery, tomatoes and basil on a serving platter. </span></li>

<h3>Method</h3>

<li><span data-contrast="auto"> Generously season steaks. </span></li>
<li><span data-contrast="auto"> Combine marinade ingredients and add steaks, taking care to coat evenly. Marinate for 30 minutes. </span></li>
<li><span data-contrast="auto"> Boil potatoes for about 6-8 minutes or until cooked through. Drain. </span></li>
<li><span data-contrast="auto"> Mash potatoes with the back of a wooden spoon until smooth. </span></li>
<li><span data-contrast="auto"> Stir through buttermilk, butter, mustard and herbs. Season well. </span></li>
<li><span data-contrast="auto"> Remove steaks from marinade and pat dry. </span></li>
<li><span data-contrast="auto"> Heat oil in a large saucepan or griddle pan and fry steaks for about 3-4 minutes per side. 8. Add butter during last 2 minutes of cooking time. Add lemon juice and baste steaks with pan drippings. Rest for at least 4-5 minutes before slicing. </span></li>
<li><span data-contrast="auto"> Dollop mash onto plates and top with sliced steak. </span></li>

<li><span data-contrast="auto"> Stir in garlic, ginger, lemongrass and chilli and fry for about 2-3 minutes. </span></li>
<li><span data-contrast="auto"> Reduce heat and add buttermilk, stock, mustard and coriander. Gently simmer for 2-3 minutes. </span></li>
<li><span data-contrast="auto"> Completely submerge chicken in liquid. Cover with a lid and poach over a gentle heat for about 15-20 minutes or until cooked through. </span></li>
<li><span data-contrast="auto"> Fry red onions in a separate pan for 5-6 minutes or until golden and charred. </span></li>
<li><span data-contrast="auto"> Add pak choy, spinach and mange tout to pan and cook for about 2-3 minutes. </span></li>
<li><span data-contrast="auto"> Remove from heat, season well and add a pinch of chilli flakes. </span></li>
<li><span data-contrast="auto"> Serve chicken with wilted greens and charred red onions. </span></li>

<p><strong>1. Make buttermilk with lemon juice</strong><br />
We rarely use the whole carton in one go anyway! By mixing 1 tbsp vinegar or lemon juice with every 1 cup milk, you can make the exact amount of buttermilk you need, on the cheap.</p>
<p><strong>2. Replace mincemeat with lentils</strong><br />
Bobotie, meatballs or good ol’ spaghetti Bolognese – all of these meaty favourites can be made with more affordable plant-based protein. Lentils mimic the texture of mince and will take on whatever flavours you cook them with.</p>
<p><strong>3. Quinoa over barley</strong><br />
Barley is a cheaper option that provides you with more fibre, nearly as much iron, and plenty of manganese, selenium and other phytonutrients. The only downside is that it contains gluten.</p>
<p><strong>4. Use Chia seeds instead of flaxseeds</strong><br />
Ground-up (that way your body can absorb the nutrients), flaxseeds provide plenty of protein and omega-3 fatty acids. And they can be used to replace eggs in vegan cooking and baking, in the same way as chia seeds.</p>
