<li><span data-contrast="none"> For the filling, heat oil in a large pot over medium heat. Sauté the onions, celery, garlic and carrots for about 5-8 minutes. </span></li>
<li><span data-contrast="none"> Add tomato paste and spices. Fry for another minute. </span></li>
<li><span data-contrast="none"> Add beef, black pepper and thyme. Brown for 3-5 minutes. </span></li>
<li><span data-contrast="none"> Add beer, Worcestershire sauce, tomato puree and sugar. Season. </span></li>
<li><span data-contrast="none"> Lower the temperature and cook for about 2 hours. </span></li>
<li><span data-contrast="none"> For the pastry, combine the butter and water in a pot and bring to a boil. </span></li>
<li><span data-contrast="none"> Combine flour, salt, parsley and cumin seeds in a bowl. </span></li>
<li><span data-contrast="none"> Add the butter mixture to the flour mixture. Combine with a wooden spoon to create a dough. </span></li>
<li><span data-contrast="none"> Knead the dough on a floured surface for about 3 minutes or until smooth. </span></li>
<li><span data-contrast="none"> Preheat the oven to 180°C. Spray a 25x35cm pie dish with non-stick spray. 11. Roll the pastry out to about 2-3mm thick. Chill until firm. </span></li>
<li><span data-contrast="none"> To assemble, spoon the pie filling into the prepared dish. </span></li>
<li><span data-contrast="none"> Cover the filling with pastry. Use any pastry off-cuts to decorate the pie. Brush the pastry with egg wash. </span></li>

<li><span data-contrast="none"> Preheat oven to 180°C. 6. Cut 6x15cm rounds from the short crust pastry. Brush with egg wash. </span></li>

</strong><span data-contrast="none">Working with puff pastry can be a finicky thing, but there are some basic tricks to it. Avoid overworking it, as doing so can cause the layers to compress, which reduces flakiness. Use a sharp knife to avoid squeezing the layers of puff pastry together. <li><span data-contrast="auto"> Add another glug of oil and sauté onion, carrots and celery for 3-5 minutes or until golden. </span></li>
<li><span data-contrast="auto"> Add garlic and thyme and fry for 1-2 minutes. </span></li>
<li><span data-contrast="auto"> Return beef to pot and pour in tomatoes, beer and stock. Cover and simmer for about an hour or until meat is tender. </span></li>

<li><span data-contrast="auto"> Place haddock in a colander over a pot of simmering water, cover with a lid and steam for about 8-10 minutes or until cooked through. Flake fish, discard bones and set aside. </span></li>
<li><span data-contrast="auto"> Heat oil in a large ovenproof skillet; sauté onions and carrots until golden. </span></li>
<li><span data-contrast="auto"> Add garlic and fry for another minute or until fragrant. </span></li>
<li><span data-contrast="auto">Pour in cream, vegetable stock and dill. Simmer for 5-6 minutes. </span></li>

<h3>Method</h3>

<li><span data-contrast="auto"> Combine marinade ingredients and chicken in a bowl and set aside for an hour. </span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Fry chicken in batches in a large pot or skillet for about 3-4 minutes. Don&#8217;t cook chicken all the way through. Reserve marinade and set aside.</span></li>
<li><span data-contrast="auto"> Remove chicken and set aside. </span></li>
<li><span data-contrast="auto"> For the sauce, heat oil and butter in the same pan and sauté onions for 3-4 minutes. </span></li>

<li><span data-contrast="auto"> Stir through spices and cook for 2 minutes. Add a splash of water if needed. </span></li>
<li><span data-contrast="auto"> Add tomato paste and cook for a minute. Stir through sugar. </span></li>
<li><span data-contrast="auto"> Pour in tomatoes and coconut milk or cream. Simmer for 5 minutes. </span></li>
<li><span data-contrast="auto"> Add chicken and simmer for about 10 minutes. </span></li>

<li><span data-contrast="auto"> Pour butter chicken into a large ovenproof dish. </span></li>

<li><span data-contrast="auto"> Sift flour and salt into a bowl. Rub butter into flour using your fingertips until it resembles breadcrumbs. </span></li>
<li><span data-contrast="auto"> Mix through herbs and cream cheese with a wooden spoon until a smooth, soft dough is formed. Add a splash of water if dough is too dry. </span></li>
<li><span data-contrast="auto"> Wrap in clingfilm and chill for 30 minutes. </span></li>
<li><span data-contrast="auto"> Arrange vegetables in an ovenproof dish or deep roasting tray, taking care to spread them out evenly. </span></li>
<li><span data-contrast="auto"> Drizzle with oil, season, sprinkle with herbs and garlic. Roast for 15 minutes or until golden and slightly charred. </span></li>
<li><span data-contrast="auto"> Combine pesto and oil. </span></li>
<li><span data-contrast="auto"> Remove vegetables from oven and stir through pesto. Roast for another 6-8 minutes. </span></li>
<li><span data-contrast="auto"> Roll out pastry onto a lightly floured surface to about 3cm thick and shape according to your greased pie dish. Leave enough pastry to create a lid. </span></li>
<li><span data-contrast="auto"> Press pastry into pie dish, prick base with a fork and blind bake for 10 minutes. </span></li>
<li><span data-contrast="auto"> Remove vegetables from oven, season well and stir. Spoon vegetables into the blind-baked pie dish. </span></li>
<li><span data-contrast="auto"> Cut remaining pastry into large strips and arrange over filling to create a lattice. </span></li>
<li><span data-contrast="auto"> Brush with egg and bake for another 15-20 minutes or until pastry is golden and cooked through. Serve hot out of the oven.</span></li>

<li><span data-contrast="auto"> Remove chicken and allow to cool before shredding. Reserve ¼ cup poaching liquid. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pot and sauté onion and leeks for 5-6 minutes. </span></li>
<li><span data-contrast="auto"> Stir through garlic and fry for another 2 minutes. </span></li>
<li><span data-contrast="auto"> Add butter and, once melted, stir through flour until smooth.</span></li>

<p><strong>METHOD</strong></p>
<p><b>For the chicken marinade</b></p>
<p><b>1. </b>Place all ingredients in a bowl and mix to coat the chicken evenly. Cover and set aside for at least 3 hours to marinate.</p>
<p><b>For the sambal</b></p>
<p><b>1. </b>Place the oil in a pan over high heat. Once hot, add the chillies and garlic, then fry for 30 seconds.<br />
<b>2. </b>Remove from the heat and add to a food processor with the remaining ingredients. Blend into a rough paste, then transfer to a jar and set aside.</p>
<p><b>For the curry</b></p>
<p><b>1. </b>Place the oil in a pot over medium heat. Add the onion and fry for 4 minutes. Add the garlic and ginger and fry for 1 min until fragrant. Add the butter, garam masala, cumin, turmeric and tomato paste. Fry for a minute, stirring well.<span class="Apple-converted-space"> </span><br />
<b>2. </b>Add the tinned tomatoes, stock and sugar. Bring to a boil, then reduce to a simmer. Cook for 20–30 min, until reduced.<br />
<b>3. </b>Add the cream, chicken and marinade to the sauce and cook for 10 minutes or until the chicken is cooked.<span class="Apple-converted-space"> </span><br />
<b>4. </b>Serve in bowls with rice, warm roti, coriander and sambal.</p>

<p><strong>SERVES</strong> 6 //  <strong>COOK TIME</strong> 45 min</p>
<p><strong>INGREDIENTS</strong><br />
<strong>For the chicken</strong><br />
<strong>5</strong> chicken breasts,<span class="Apple-converted-space"> </span>cut into cubes<br />
<strong>1 tsp</strong> garam masala<br />
<strong>1 tsp</strong> ground turmeric<span class="Apple-converted-space"> </span><br />
<strong>1 tsp</strong> ground coriander<br />
<strong>½ tsp</strong> cumin<br />
<strong>2</strong> garlic cloves, minced<br />
<strong><span class="Apple-converted-space"> ⅓ </span>cup</strong> double-cream yoghurt<span class="Apple-converted-space"> </span><br />
<strong>For the curry</strong><br />
<strong>1</strong> onion, finely chopped<br />
<strong>1 tbsp</strong> garlic and ginger paste<br />
<strong>1 tbsp</strong> tomato paste<br />
<strong>2 tsp</strong> garam masala<br />
<strong>1 tsp</strong> ground turmeric<span class="Apple-converted-space"> </span><br />
<strong>1 tsp</strong> ground coriander<br />
<strong>½ tsp</strong> cumin<br />
<strong>½ tsp</strong> chilli powder<br />
<strong>2</strong> cardamom pods<br />
<strong>1</strong> tin chopped tomatoes<br />
<strong>1 cup</strong> water<br />
<strong>½ cup</strong> cream<br />
<strong>To serve</strong><br />
<strong>6</strong> large rolls, heated<br />
<strong>Handful</strong> coriander, chopped<span class="Apple-converted-space"> </span></p>
<p><strong>METHOD</strong><br />
<strong>For the chicken<span class="Apple-converted-space"> </span></strong><br />
<strong>1.</strong> Place chicken in a bowl and season with salt and pepper.<br />
<strong>2.</strong> Add the spices and garlic, and stir well to coat the chicken. Mix in the yoghurt.<span class="Apple-converted-space"> </span><br />
<strong>3.</strong> Cover and refrigerate for<span class="Apple-converted-space"> </span>at least 30 minutes.<br />
<strong>For the curry</strong><br />
<strong>1.</strong> Heat some oil in a pan over medium heat. Fry the onion for 5 minutes until soft. Add the garlic and ginger paste, tomato paste and spices. Cook for 1 min.<br />
<strong>2.</strong> Mix in the tinned tomatoes and water. Reduce the heat and simmer for 10–15 minutes or until thick.<span class="Apple-converted-space"> </span><br />
<strong>3.</strong> Using a stick blender, blend the sauce until almost smooth.<span class="Apple-converted-space"> </span><br />
<strong>4</strong>. Bring to a simmer and add the chicken. Simmer for another 10 minutes or until the chicken is cooked. Stir through the cream and season.</p>
<p><strong>To serve</strong><br />
<strong>1.</strong> Slice off the tops of the rolls and use a fork to scoop out the fluffy middle so that you have a hollow bread ‘bowl’. Remember to leave enough roll around the sides of the ‘bowl’ so that the curry doesn’t seep through.<br />
<strong> 2.</strong> Spoon the curry into each roll and top with the chopped coriander.</p>
<p><em><strong>Quick tip:</strong> Buy rolls that have a hearty centre and a thicker crust so that you can fill them with as much curry </em><br />

<p class="p1"><b>INGREDIENTS<br />
</b><b>For the baked butter chicken<br />
</b><b>1 tbsp</b> tandoori spice<br />
<b>2</b> garlic cloves, grated<br />
<b>1 tsp</b> grated ginger<br />
<b>1 tsp</b> salt<br />
Juice of <strong>1</strong> lemon<br />
<b>100 ml</b> vegetable oil<br />
<b>1</b> whole chicken<br />
<b>5 tbsp</b> butter<br />
<b>400 g</b> <strong>tin</strong> chopped tomatoes<br />
<b>1 </b>onion, chopped<br />
<b>1 cup</b> cream<br />
<b>1 tsp</b> tomato paste<br />
<b>1 tsp </b>cumin<br />
<b>For the coriander sauce<br />
</b><b>1 cup</b> coriander<br />
<b>¼ cup</b> mint<br />
<b>7</b> green chillies, chopped<br />
<b>1</b> onion, finely chopped<br />
<b>3 tbsp</b> sugar<br />
<b>2 tbsp</b> grated ginger<br />
<b>1</b> garlic clove, grated<br />
<b>½ tsp</b> cumin, toasted<br />
<b>½ tsp </b>salt<br />
<b>½ cup</b> yoghurt</p>
<p class="p1"><b>METHOD<br />
</b><b>For the baked butter chicken<br />
</b><b>1.</b> Mix tandoori spice, garlic, ginger, salt, lemon juice and 3 tbsp oil. Coat the chicken in the mixture and leave to marinate for 1 hour.<br />
<b>2. </b>Preheat oven to 180°C.<br />
<b>3.</b> Heat remaining oil and butter in an ovenproof pot. Sear the chicken on all sides, then add the remaining ingredients.<br />
<b>4.</b> Place pot in oven and bake for 1 hour 30 minutes. Remove from oven and leave the chicken to cool in sauce for 30 minutes.<br />
<b>5.</b> Remove whole chicken from sauce and shred all meat off it. Return meat to sauce and warm through, stirring to mix.<br />
<b>For the coriander sauce<br />
</b><b>1.</b> Place all ingredients, except yoghurt, in a food processor and pulse until smooth.<br />
<b>2. </b>Fold in yoghurt.</p>

<b>2 tbsp</b> tomato paste<br />
<b>1 tbsp</b> masala spice<br />
<b>1 cup</b> cream<br />
<b>1 cup</b> full-cream plain yoghurt<br />
<b>300g</b> prawns<br />
Coriander, chopped, to garnish<br />
Coconut shavings, to serve<br />
Basmati rice, to serve</p>
<p class="p3"><span class="s2"><b>METHOD<br />
</b></span><span class="s2"><b>1.</b> Heat oil in a pan over high </span>heat and fry onions, garlic and ginger until browned.<br />
<b>2.</b> Add chicken, tomato paste and masala spice.<br />
<b>3.</b> When the chicken is almost cooked, add the cream, yoghurt and prawns. Cook for a further 5 minutes.<br />
<b>4.</b> Garnish with coriander and coconut and serve with rice.</p>
