<p class="p1"><b>INGREDIENTS<br />
</b><b>3 cups</b> bone broth<br />
<b>1 tbsp</b> soy sauce<br />
<b>500 g</b> spinach and ricotta ravioli<br />
<b>2 tbsp</b> olive oil<br />
<b>4</b> garlic cloves, sliced<br />
<b>½ </b>red chilli, sliced<br />
<b>200 g</b> packet bacon, chopped<br />
<b>½ cup</b> rocket</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Place the bone broth and soy sauce in a large pot and bring to the boil over medium heat.<br />
<b>2. </b>Add the ravioli to the broth mixture and cook according to the package time. Drain, reserving the broth for later.<br />
<b>3.</b> Heat the oil in a pan over medium. Once hot, add the ravioli and pan fry for 2 minutes a side. Remove and set aside.<br />
<b>4. </b>Add the garlic and chilli to the pan. Fry for 1–2 minutes until the garlic is golden brown. Remove from pan and set aside.<br />
<b>5. </b>Finally, add the bacon and fry until crisp, about 8–10minutes. Return the garlic, chilli and ravioli to the pan and allow to heat through.<br />
<b>6. </b>Divide the ravioli, garlic and bacon between bowls, reserving some bacon for the top.<br />
<b>7. </b>Pour over the remaining bone broth, top with the extra bacon and garnish with rocket.</p>

<b>4 </b>garlic cloves, finely chopped<br />
<b>½ tsp</b> fennel seeds<br />
<b>¾ cup</b> olives<br />
<b>2 sprigs</b> origanum, cut in half<br />
<b>2 sprigs</b> rosemary, cut in half<br />
<b>1½</b> lemons, sliced<br />

<p class="p1"><b>METHOD<br />
</b><b>1. </b>Preheat the oven to 180°C.<br />
<b>2. </b>Mix the flour and paprika together and season with salt and pepper. Toss the chicken thighs in the flour mixture and set aside.<br />
<b>3. </b>Heat the oil in a pan over medium and fry the garlic and fennel seeds until golden brown. Remove from the pan before adding the chicken.<br />
<b>4. </b>Brown the chicken until the skin is crispy, about 2–3 minutes a side.<br />
<b>5.</b> Transfer the chicken to a casserole dish and top with the garlic and fennel seeds. Add the olives, herbs, lemons and bone broth, cover with foil, and bake for 30 minutes. Remove the foil and continue baking for another 30 minutes or until the chicken is cooked through.</p>

<p class="p1"><b>INGREDIENTS<br />
</b>Bones from <b>1</b> chicken<br />
<b>2</b> onions, quartered<br />
<b>4</b> carrots, halved<br />
<b>2</b> celery stalks, halved<br />
<b>1½ tsp</b> red chilli flakes<br />
<b>1 bunch</b> parsley<br />
<b>1</b> bay leaf<br />
<b>2 tsp</b> peppercorns</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Add the chicken bones, onions, carrots and celery to a large pot. Fill the pot with water until it covers the chicken bones by 3 cm.<br />
<b>2.</b> Bring to the boil and, using a ladle, skim off any bits and pieces that float to the top of the water.<br />
<b>3.</b> Put the lid on and simmer for 3–4 hours.<br />
<b>4.</b> Strain the broth and cool completely. Store in the freezer for up to 3 months, or the refrigerator for 3–5 days.<br />
<b>5. </b>When ready to serve the broth, transfer to a pot and add the remaining ingredients. Simmer gently for 30 minutes. Season to taste.<br />
<b>6.</b> Enjoy this dish as a warming and nutritional meal on its own or add it instead of stock to your soups and stews.</p>

<b>2 tbsp</b> apple-cider vinegar<br />

<b>3 tbsp</b> grated ginger<br />
<b>2 </b>garlic cloves, crushed<br />
<b>1 tbsp </b>miso paste<br />
Bean sprouts, to serve<br />
Chilli flakes, to serve</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Preheat oven to 180°C. Roast beef bones for 30 minutes.<br />
<b>2. </b>Place bones in a large pot. Add cold water and vinegar.<br />
<b>3.</b> Add onions, carrots, ginger, garlic and miso, and bring to the boil.<br />
<b>4.</b> Turn down to medium-low and simmer for 2 hours. Every 20 minutes, skim off any impurities drifting at the top of the pot. Season with salt and pepper.<br />
<b>5.</b> Ladle the broth into bowls. Top with sprouts and chilli.</p>

<b>500g</b> beef shin (including bones), cubed<br />
<b>1</b> onion, peeled and chopped<br />
<b>6</b> medium potatoes, roughly chopped<br />
<b>4 cloves</b> garlic, peeled and crushed<br />
<b>2 stalks</b> celery, sliced<br />
<b>1</b> large carrot, peeled and chopped<br />
<b>3 tbsp</b> tomato paste<br />
<b>1 tin</b> chopped tomatoes<br />
<b>1 tin</b> tomato purée<br />
<b>1L</b> beef stock<br />
<b>1 tin</b> kidney beans<br />
<b>1 tin</b> chickpeas, drained and rinsed<br />
<b>200g</b> pasta shells<br />
Salt and black pepper<br />
<b>½ cup</b> grated Parmesan<br />
<b>2 tbsp</b> micro basil</p>
<p class="p1"><b>METHOD<br />
</b><span class="s1"><b>1.</b> Heat the olive oil in a large pot over medium-high heat</span>. Brown the beef shin until sealed and golden, then remove from the pot and set aside.<br />
<b>2.</b> Add the onion and cook until translucent, about four minutes, then add the potatoes, garlic, celery and carrot, and cook until they begin to soften.<br />
<span class="s1"><b>3.</b> Add the tomato paste and cook for 30 seconds, </span>then add the tinned tomatoes, tomato purée, beef stock <span class="s1">and sealed beef shin, bones included. Cook for a </span>further 45 minutes.<br />
<span class="s1"><b>4.</b> Add the beans, chickpeas and pasta shells and cook until </span>the pasta is al dente. Season and serve garnished with Parmesan and micro basil.</p>
