</span><span data-contrast="auto">½ tsp (2.5ml) white vinegar</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">100g (75ml) glucose syrup</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Pinch of salt</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2 tsp (10ml) vanilla paste</span><span data-ccp-props="{}"><br />

<h3>Method</h3>
<ol>
<li>Mix gelatine and ½ cup (125ml) water in the bowl of a stand mixer and set aside.</li>
<li><span data-contrast="auto"> Line a 30x21cm tin with baking paper and spray with non-stick spray.</span></li>
<li><span data-contrast="auto"> Heat the remainder of the water, sugar, vinegar and glucose syrup over medium heat. Swirl the pot now and again to help the sugar dissolve. Once the sugar has dissolved, bring the mixture to a gentle simmer.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Use a pastry brush dipped in hot water to gently remove any sugar crystals from forming on the sides of the pot. Be sure to squeeze extra water out from the brush to not add any extra liquid to the sugar mixture.</span></li>
<li><span data-contrast="auto"> Gently swirl the sugar mixture regularly to evenly distribute the heat and to avoid hot spots. Cook the syrup until firm ball stage (118°C-120°C). </span><span data-ccp-props="{}"> (See cook&#8217;s note.)</span></li>
<li><span data-contrast="auto"> Using the whisk attachment, turn the mixer on to break up the gelatine. Gently pour the hot sugar mixture into the mixer while whisking on a low-medium speed. Take care not to pour the syrup onto the whisk attachment to prevent it from splattering, which may cause burn injuries.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Continue until you&#8217;ve added all the syrup. (The heat of the</span> syrup will melt the gelatine.)<span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Increase speed up to medium, and add salt and vanilla. Whisk for about 6-8 minutes. Scrape down the sides to ensure even mixing.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> The base should become smooth, white and fluffy, and it should expand roughly three times in size. The mixture should resemble a thick, glossy and delicate meringue.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Use a silicone spatula to scrape out the marshmallow mixture onto the prepared tin while still warm. Allow to set for about 4-6 hours at room temperature.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Combine corn flour and icing sugar. Dust a knife in the mixture to prevent sticking. Cut marshmallows into squares and dust lightly in the same icing mixture. Store in an airtight container.</span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> Add butter and egg then whisk until creamed together and pale yellow in colour, about 5-8 minutes.</span></li>
<li><span data-contrast="auto"> Add sugar and vanilla then whisk just until combined.</span></li>
<li><span data-contrast="auto"> Sift together flour, bicarb and salt over the creamed mixture. Mix to combine, forming a dough.</span></li>
<li><span data-contrast="auto"> Roll 30g pieces (slightly smaller than a golf ball) into balls using your palms.</span></li>
<li><span data-contrast="auto"> Combine desiccated and chopped coconut flakes. Roll balls in coconut and place on a lined baking tray.</span></li>
<li><span data-contrast="auto"> Using your thumb or the back end of a wooden spoon, make an indent in each ball. Spoon or pipe a blob of jam into the cavity. Chill until firm.</span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C.</span></li>
<li><span data-contrast="auto"> Bake cookies until light brown, about 11-13 minutes.</span></li>

<li><span data-contrast="auto"> Add eggs one at a time, mixing until fully incorporated before adding the next one. Add vanilla and mix well.</span></li>
<li><span data-contrast="auto"> Add flour and salt and mix briefly to create a dough.</span></li>
<li><span data-contrast="auto"> Divide dough in half and shape into discs. Cover and chill until firm.</span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C.</span></li>
<li><span data-contrast="auto"> Roll dough out on floured surface to 3mm thick. Cut out circles with a 7cm cookie cutter. Using a smaller round, cut out the centre to create rings.</span></li>

<li><span data-contrast="auto"> Bake cookies for 10-12 minutes, rotating baking trays halfway through. Remove and cool.</span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Heat cream until scalding hot. Pour over chopped chocolate and stir to melt into a smooth ganache.</span></li>
<li><span data-contrast="auto"> Refrigerate ganache for 30 minutes, or until firm.</span></li>
<li><span data-contrast="auto"> Shape 12 spoonfuls into balls. Freeze in a single layer for 2 hours or until rock hard.</span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto"> Sift together flour, baking powder and bicarb. Add salt and set aside</span></li>
<li><span data-contrast="auto"> Whisk butter and sugars for 5 minutes, scraping sides, until sugar is almost melted.</span></li>
<li><span data-contrast="auto"> Whisk in eggs and vanilla.</span></li>
<li><span data-contrast="auto"> Add in sifted ingredients and chocolate chips and whisk to form a dough.</span></li>
<li><span data-contrast="auto"> Portion dough into 12 x 70g pieces and flatten into a disc. Place frozen ganache balls in the centre of each, then enclose ball with dough. Chill for 10 minutes.</span></li>
<li><span data-contrast="auto"> Place 3-4 balls on a lined baking tray. (Leave room between balls to spread to 10cm wide.) Sprinkle with salt and bake for about 10-11 minutes or until golden.</span></li>
<li><span data-contrast="auto"> Cool on the tray until firm. Repeat with remaining dough.</span></li>
<li><span data-contrast="auto"> Serve immediately for best result, or store in an airtight container for a week.</span></li>
